He tells me he is in a cookery competition at school (just gone into secondary) and has to make a 2 course meal.

he wants to do a main and a dessert.

any ideas what he could do??

How about a (really easy) pie? Roll out puff pastry (bought) Mix cooked chicken with a white sauce and some veg (chopped cooked broccoli/peas/sweetcorn or all 3) and put down the centre third of the pastry. Cut the 2 sides in strips outward and lay over the centre in alternating strips (make sense?) seal top and bottom and bung in the oven for 30 mins on high. Its called a jalousie - don't ask me how to pronounce it.
that's the main, then do a spongecake or something for pudd.
what'd u think?

sounds good. do you think it might go against him having ready made pastry though?

think i'll make that myself.

any ideas for a quick but impressive pud? he really wants to win

Well i don't know about the pastry rules, but I know when my ds1 did cookery he was told to bring a sheet of puff pastry and a can of friut pie filling and they just put the 2 together and bunged it in the oven. Not really delia is it? quick and easy pud? Trifle (ready made sponge and custard and just mae up the jelly

Easy main that I use for dinner guests all the time:

Fry garlic & a bit of chilli (optional), then add single cream and about quarter of a crumbled up veggie Oxo cube. Add raw prawns and/ or strips of smoked salmon. It's absolutely delicious and sooooo easy - takes about 5 mins. Pour creamy mixture over linguini or other pasta.

For extra healthiness and fab taste, add raw baby spinach too - wilts down to nothing and is beautiful in this.
