Strictly speaking, diabetics don't need special diabetic cake, an ordinary one will do. Does the person in question refuse to eat ordinary cake or something? I'll have a look in my diabetic cookbook to see if there are have any interesting recipes.

Had a look in my recipe book, but there are no choc cake recipes, sorry. Go get an ordinary one - yum!

Had to do one of these for a baby shower as the guest of honor had gestational diabetes. I couldn't find a bakery to do it, so got one of those "low-carb" mixes. It was a little drier than a regular one but then, I'm not the greatest cook in the world so maybe left in in too long. It tasted okay though. I got a recipe for diabetic frosting from allrecipes.com.

My daughters diabetic and I would use a normal chocolate cake recipe but use half the sugar in the recipe and add a couple of large spoons of granulated sweetener. The icing could be made with real chocolate - which isn't as bad as icing sugar - or why not fill it with whipped cream and strawberries! For her birthday I always make strawberry shortcakes - two large rounds of shortcake made with less sugar than the recipe states sandwiched togethr with cream and strawberries and decorated with them - I then stick sparklers in - always a big hit!!! Hope this helps! Alternatively there is a website called the Low Carb Megastore and they sell cake mixes and icing - but I'd prefer something home made and simple!

Can you make it with Fructose (sold in Tescos etc as Fruisana)? Fructose is better tolerated by diabetics than glucose (ordinary sugar). You don't need to use as much - I think it tells you on the back of the packet.

You could try www.sugarfreesuperstore.co.uk (sorry can't do links!)

Slink - just be careful of eating too much diabetic chococate. Artificial sweeteners can have a laxative effect, as I found out once after troughing a whole packet of Weight Watchers sugar free sweets!

Aha slink there was a programme about diabetes on R4 yesterday - Anthony Worrall Thompson has apparantly done a book for diabetics and he was talking about a choc. sponge recipe in that. Nip down your local bookshop and find it!
