Chocolate Crunch Brownies

250g/8oz unsalted butter

425g/14 oz golden caster sugar

4 large free range eggs, beaten.

65g/2 and a half oz plain flour

40g/1 and a half oz cocoa powder

400g/13oz plain chocolate (either chips or a bar broken into small pieces.)

Makes: 24 Brownies

Prep time: 20 minutes

Cooking time: 30-35 minutes

? Preheat oven to 180 C/350 F/GM4

? Melt the butter in a small pan and pour into a large mixing bowl. Add the sugar and eggs mixing well. Then add the flour and cocoa powder.

? Add the chocolate chunks and stir through. Lightly grease the square tin and pour in the mixture.

? Bake for 30-35 minutes

? Remove from the oven and cut into 2 inch squares. Using a palette knife, remove from the tin onto a cooling rack. This helps to stop the brownies over-cooking and becoming a little dry.

Danish Pastry Pizzas

300g/10 and a half oz strong white flour

Half tsp fast-acting/easy bake yeast

Half tsp caster sugar

1 tsp salt

1tbsp olive oil

200ml/7fl oz tepid water

4 tbsp passata

100g/4oz thinly sliced ham or Parma ham

1 tsp dried oregano

125g/5oz grated mozzarella

Salt and pepper

Makes: 12

Prep time:20 minutes (but best to leave dough to rise for 40 mins)

Cooking time: 25 minutes

? Preheat oven to 180 C/ 350 F/GM4

? Put the flour, yeast, sugar and salt in a large mixing bowl.

? Make a well in the middle and pur in the oil and water.

? Use a spoon to begin with, stir the liquid around and as the flour slowly collapses into the liquid mix into the dough.

? Once you have a lump of dough start using your hands.

? Bring the dough onto a well-floured work-surface and begin kneeding.

? After 5 minutes place the dough into a clean mixing bowl and ;eave in a warm place to rise for 40 minutes.

? After the forty minutes is up, the dough should have doubled in size. Take out of the bowl and kneed again for a minute or so before pulling the dough into a rectangular shape, roughly 40cm x 25 cm on a large chopping board.

? Spoon the passata over the pizza dough and spread evenly around. Sprinkle evenly with the ham, dried oregano, mozzarella and seasoning.

? Turn the pizza so that the longest side of the rectangle is in front of you. Very gingerly, start rolling the pizza up like a swiss roll.

? Cut into 12 pieces, approximately 1cm thick and carefully put on a baking sheet, lined with baking parchment cut side up.

? Bake for 25 minutes.

Ham and Cheese Muffins

300G/ 10 and a half oz se;lf raising flour

½ tsp mustard powder

½ tsp paprika

75g/ 3 oz butter

6 slices honey roast ham chopped into 1-cm pieces

185g/ 6 ½ oz mature cheddar cheese, grated.

1egg beaten

250 ml/ 9fl oz milk

6 tbsp finely grated parmesan (to sprinkle on top)

Makes: 12 muffins

Prep time: 15 minutes

Cooking time: 20 minutes

? Preheat oven to 190 C/ 375 F/ GM5

? Lightly grease a 12 hole muffin tin (alternatively use muffin cases in the holes)

? Sieve the flour, mustard powder and paprika into a large mixing bowl. Rub in the butter until this resembles breadcrumbs. Add the ham and cheese, then stir in the egg and milk.

? Spoon equal amounts of the mix into the 12 muffin cases and sprinkle a little parmesan on top of each.

? Bake for 20 minutes

? Remove to a wire cooling rack.

There was an extract from GR autobiography in the paper this week where he described the labour ward as 'being in a room full of skinned rabbits'. He famously didn't attend the birth of any of his children or change a nappy. I could never fancy a bloke like that.

no idea why GR is so fanciable, he might be a good chef but I can't stand people who swear so much they don't even realise they're doing it anymore

I cooked before I was a mum, so I reckon I am more of a natural cook than Tana Ramsay. My kitchen is a bit smaller than her's so prob won't look so good in the photos and none of you will have heard of my DH, but I reckon I have enough cookery books to pull together a few recipes.

Will any of you buy my book?

I had a rude dream last night about GR, disturbing really as he is old enough to be my dad! But sexy in a Clint Eastwoody, explosive swearing way. Phooar.
