If I wanted to make a gluten free banana cake...

that is what dh did but check the baking poawder has no gluten in it.

I would subsititue the ordinary flour for the gluten free plain flour from Sainsburys (cornflour would be a bit grim I think) and add some xantham gum (otherwise it would fall apart), Also as Beetroot says you need to use the baking powder that comes with a white lid (not red).

Don't think waitrose does gluten free flour- if you have a chinese supermarket near you you can make up plain gluten free flour- iirc it's 2 cups of rice flour, 1/4 cup potato starch 1/4 tapioca flour. Although I always use the Sainsburys flour now so could be wrong.

Thought they did have some when I went in last week although it might have been gluten free bread flour.

Was hoping I'd be able to concoct something from whatI had inthe cupboard - going to see a friend tomorrow and one of her DDs is possibly coeliac and therefore gluten free.

Flapjacks are Ok aren't they?

ds1 and ds3 couldn't have flapjacks (oats contain small amounts of gluten) but some coeliacs can.

There may be gf flour in waitrose- dh said there wasn't, but I wouldn;t trust him The bread flour should be OK as well- it just has xantham gum in already.

Chocolate cornflake crispies, or choc rice crispies are OK.
