Meal ideas for ND child

Sorry if this is the wrong forum- but looking for some ideas. I also appreciate everyone likes different things whether ND or NT, but keen to find out how people have navigated common issues over texture whether for themselves of ND kids.

My DD is 14, AuDHD and very fussy about food. Won’t eat vegetables apart from potatoes ( and occasionally carrots). She does like spicy and hot food. It is very much a texture thing.

at the moment she lives on macaroni cheese, pepperoni pizza, cheese and ham (thinly sliced) sandwiches, pasta with tomato ketchup and cheese, plain rice, she also likes chicken curry, English cooked breakfast ( without mushrooms or tomatoes). Cod and chips. Will eat roast chicken/ chicken shop style food/steak/sausages that aren’t too fatty and no sign of herbs etc.

she will drink fruit juice ( smooth) including beetroot shots which is a positive. protein is no problem generally but I worry about the lack of veg. She loves processed food - so no issues with processed meat, crisps, sweets etc.

can anyone suggest meals they’ve made that get veg in without facing problems over texture?

also, the rest of the family love a variety of flavours of textures so would love to hear from people who make a ‘base’ meal which can then have be added to for the NT kids and adults, but works for the ND member of family.

Will she eat mince? You could make a base mince and grate in vegetables like carrots and very finely chopped mushrooms which when cooked in you can’t tell they’re in there. Then add to different meals like jacket potatoes, spaghetti, add spice for a chilli, and you can add more veg for everyone else in their portions.

Food safety was the thing my ND DD needed so she was more willing to try things if there was no pressure and she knew that there was something else she could cook. So I took her to Iceland once a month with a budget and she got things like fries and chicken goujons.

Once she had those in she relaxed a lot and actually started trying more things.

It wasn’t linear though. If she’s having a bad day she still can’t cope with some foods even if she’s requested them earlier in the day.
