CURRY GOAT recipe please ..... And am I mad to attempt it .....

..... as the only white daughter-in-law in a huge Jamaican family? It's DD2's 'welcoming' party on Sat and everyone's pitching in but no one seems to be doing curry goat and no family party is complete without it ......

I've never made it before and of course they're all connoisseurs ...

goat or mutton
bunch fresh chives
5 garlic cloves
small bunch fresh thyme
1 scotch bonnet pepper
3tbsp garam masala or Jamaican curry powder
4 cloves
4 tbsp oil
4 aubergines (sometimes I do, sometimes I don't)
1 litre water
1 lime

ok, can someone tell me how to make the ackee and saltfish dish, i want to surprise my dp becuse i always get him to make it for me, its soooo delicious!!!

ok

prepare the salt fish. Wash it with cold water. Put in pot cover with water boil. Throw water away, fill pot and boil again. Drain and cool.

Heat oil in large pan fry onions, spring onions, garlic hot pepper and thyme. Add salt fish and fry, stir constantly. for a few mins. Add 2 chopped de-seeded tomatoes, then ackee. Try not to break up the ackee. Season, serve.

Good girl. Remember you don't want to lose all of the salt in the saltfish so boiling it twice will be enough.

Oh mars you're a love Still not sure if I'm going to do it - trying to guage whether or not it constitutes the end of the world if it is absent. Probably does, I know. DH has offered to cook it actually, but I have a million and one other jobs I want him to do when he gets home tomorrow night!! We'll see.

Franch, don't forget to let us know how it goes! All the recipes sound delicious! Bajans don't usually cook curry goat, but I think I'll be giving it a whirl as well (I love curry goat!!)

Anyone got a recipe for callaloo?

Callaloo

Onions
Tomatoes

fry them off and season them up (just a little oil).

Tin of callaloo... make sure to squeeze out the water!

When you think it's taken all the water out, squeeze some more.

Add to onions etc, stir through sprinkle black pepper on top! Let it simmer!

(That's opposed to opening tin and flinging in pot! Tastes real bad)

If you want it with salt fish... prepare usual way.... when salt fish pretty much cooked flake it into the callaloo.

There you go!

Um mars ..... Well, um, what happened is ....... DH asked MIL for her recipe, she had no faith whatsoever in his ability to get the right ingredients and not be ripped off, so said she'd get them and he could pick them up this evening, and then he got a call from her at SIL's house saying 'not to worry about the curry goat' ........

In my defence, I did warn him that if he contacted any of them they'd end up taking pity and making it for us .....

I was actually all psyched up about giving it a go - feel a bit cheated! Thought mars might award me some brownie points

Will you still come and visit mars, or have you disowned me now .......

Well as long as you promise to make it for yourselves one day I'm sure I could force myself to visit you. Sigh..............

10th Sept looking good, though I have promised to go out on the razz with a few friends. Also, it greatly depends on whether or not my client finally gives birth or not. She's at 2cm and I'm waiting. Every time my phone rings I'm convinced it's her lol.

Have fun tomorrow and ask for your MIL's recipe... though having your own is always good cos then he can't compare.

Fabulous - much to inlaws' surprise I think - tables GROANING with food (SIL was convinced I was going to starve them all) - everyone went away with AT LEAST enough to feed them all till Monday. The franch side of the family were particularly impressed with the curry goat & ackee and saltfish, and my brother has requested the recipe for saltfish fritters to take back to the Borders of Scotland

Lovely lovely day. We started at 2pm and last guests left about 11pm (my parents had imagined it would wind up about 5 ). Girls had a ball and behaved beautifully ...

Are you joining us on the 10th then mars?

Glad it was a success. They all left early didn't they? I can never get mine out before about 2am lol. Sounds like it was a great day. Do black family get togethers (I'm sure you know what I mean Franch) ever not involve a table groaning with food? lol

Salt fish fritters are to die for aren't they? Oh boy first thing on a Monday morning and I'm dreaming of a family day.

Rice 'n' Peas

chop a quick bit of garlic and cook it in a tiny bit of oil.
brown rice... (your normal amount)
tin of kidney beans (purists soak dried kidney beans overnight... but some of us have far too many children to worry about that nonsense lol)
coconut milk/(cream 1/4 block)
1 UNCUT chilli

pop rice on top of garlic, tinned "peas" (kidney beans) on top of that with the juice. Cover with water. When it comes to the boil add the coconut milk/cream and stir. ONLY STIR IT ONCE.... LEAVE IT ALONE AFTER THAT ONCE IS ENOUGH!!!!!!!!!!!!!!! Pop the uncut/unbroken chilli on top. You will get the flavour NOT the heat if it remains whole. Cook for normal time. When it is cooked air holes will appear and the water will be gone. Remember DO NOT STIR!!!!!!!!!! Throw away chilli and serve with jerk chicken, curry goat etc etc.
