How easy/costly is it to set up a trust to hold a sum of money for a child so they can only access it for say education until they're 25?

My mum (very kindly - part inheritance from her aunt) wants to gift my DC 20k to invest for education/housing and I would invest it in a junior s&s ISA but I'm slightly concerned they would blow the lot at 18!

In our will it stipulates money in trust until they're 25 with other family as trustees but because we'd not be around in such a scenario I've not really given it much thoughtGrin
