Part time self employed earnings and Universal Credit

Hi all, for the second time during the pandemic, I have lost my job.

I currently claim Universal Credit top up and the childcare element. I have reported my job loss and have been advised of the 4 week grace period for childcare payments and that they'll stop after that if no new job is found.

I've applied for lots or roles (have to be part time for a number of reasons) and i'm struggling as i'm off to University in September and whilst able to still do a few hours, id need a flexible employer.
I have a couple of things lined up, both are self employed roles. One is leaflet delivering and one is a courier role.

My questions are these:
I will declare all earnings to HMRC, even though these will be low at between £70 - £125 each week.

I've just read the .gov section on self employment and UC and it is very business orientated. I really need the childcare element to be able to work, so want to declare it as well as wanting to be legal and above board.

Can anybody advise how it works? The leafleting and couriering is paid into my bank account so do I just declare it to HMRC (I assume I need to set up an account or fill in a form each week?) and then the earning form for UC at the end of my earning period? What proof will UC require?

So after a bit more research I am even more confused. I filled in the, Am I self Employed? section on .gov and it came back with, you are employed and your employer needs to put you on PAYE.

This wont happen for the 2 roles I have lined up (rightly or wrongly as I know with couriering, there are issues with being self employed).

So how do I declare these earnings legally and above board for the benefit of me being able to claim the childcare element of UC and continue to work over summer before I sign off in September?

I will put a note in my journal and ask the question but I am just so confused and want to do the right thing.

Self-employed people have to submit accounts to UC every month, showing their business income and outgoings. The profit is then counted as income for UC.
