Mortgage and pensio

Just a quick question(I hope). OH and I are applying for a mortgage on paper lasting for 10 years which actually goes 2 years into his planned retirement at 65. We don't actually intend to have a mortgage for the next 10 years as we are expecting an inheritance in the next few months which will cover the mortgage and we will pay it off.
However rightly so mortgage company what is today that we can afford the mortgage we are applying for over the next 10 years and they want proof of his pension income. He has a number of pensions from old jobs which of paper look like they will more than cover the mortgage payments. The Mortgage company have come back today and said they want to see evidence of him actually contributing to a pension now that will provide the income we have stated his pensions will provide. This doesn't really make sense to us can anyone help?

Sorry about all the typos, but just to clarify he is currently working and has a small income and makes minimum pension contributions on that

Would it not be better to wait for your inheritance then take out a lower mortgage that you can pay before retirement?

Maybe phone the mortgage provider and ask what evidence is acceptable - normally it's the annual pension statements.
