DH was made redundant last week with one week's notice to work. He's looking for jobs right now but I'm expecting there will be a gap. I'm a SAHM to a one year old but I do adhoc days as a supply teacher (very adhoc- probably 2 days per month over the whole year). I have a permanently job lined up for September though.
To get us through the period where he's not working I can definitely up my availability to the agency but we live very rurally so not a huge amount on offer even if I say I can work every day. If he were to go for JSA do I go too and we do it as a couple? Would we be eligible for other support? And does our eligibility start the very day after he's finished work? We have zero savings as it's been a tight time with me being at home.
Am I eligible to claim JSA while I try to up my hours of supply or look for alternative work?

Firstly your dh needs to put in a claim for Contributions based Job seekers allowance assuming he has paid enough NI contributions.
Then if you don't already claim Tax credits you need to open a tax credits claim. You may initially e turned down on the basis of your household income for last tax year ( 2016-17) being over the threshold. So you may be awarded a nil award. then when you receive that nil award you ring them and explain that circumstances have changed. You will need to estimate you income for 2017-18 tax year bearing in mind what your dh has earn't already from April 6th to now and what you are likely to earn. It will be hard to estimate as you won't know at what point in the year he will find another job. You need to be prepared that you may be overpaid and need to pay some back but it would be a way of getting some income coming in soon.

Just to add the threshold with one child and no childcare costs is around £26k.

And all the above information is assuming you are not in a Universal credit area !!
