Type one diabetic doing low carb

I’ve had type 1 for 30 years since I was in primary school, always had decent hba1c readings and have had a baby, can’t lose the baby weight as I can’t fit in exercise around being back at work full time.
I have become one of those people that has a treat every day and have become reliant on sweet treats as a reward. I know this is bad so need to change, and I’ve had success with low carb in the past without feeling like I’m restricting.
I don’t like eggs and I’m pescatarian. Just wondering if anyone has any meal
ideas - they don’t have to be keto or no carb (as I’m happy to take some insulin, but I’m currently on a ridiculously embarassing ratio), but lower than bowls of cereal/sandwiches and pasta etc. I love things like tinned tuna but know it’s not great to eat every day so would appreciate any breakfast/lunch ideas in particular please!

T1D here with non coeliac gluten intolerance

When low carbing I have

Full fat Greek yogurt, sometimes mixed with Kefir and a few berries , maybe chia or flax seeds for fibre

Scrambled eggs with smoked salmon

Full English (bacon, sausage GF, mushrooms , eggs, tomatoes;) no toast beans or hash browns

Occasionally small amount of porridge (30g oats cooked in water ) higher carb but good for cholesterol

Salad with meat fish cheese leaves tomatoes artichoke hearts celery mayonnaise peppers

Omelette

Cheese and nuts

Pepperami, salami, ham

"Normal" dinner with extra veg instead of carbs eg spaghetti Bol with green beams, casserole with veg, chicken fajitas but no wrap, roast without spuds or yorkies

Cheese, cream cheese, sugar free jelly with cream, 85% chocolate

Tinned mackerel is good, mix it with some salad and you could add in a little healthy grains to bulk it out. I use a little sainsburys wholewheat pasta, it's about 1g of carbs per piece of fusilli.

I'm a prawn cocktail fiend. On low carb I'll have it on half a small baked potato.

Full fat greek yoghurt with berries or stewed rhubarb when I can get it.

I'll have half a granny Smith cut into slices with peanut butter.

Half a large avocado filled with full fat cream cheese.

I make a keto chili and have with half a baked potato and a big dollop of cream cheese but if you don't eat meat I'm not sure if making it with lentils would be too carby?

I did keto for a while (for blood sugar rather than weight) but it didn't suit me and I couldn't stop losing weight. I do low carb now and have stopped losing but struggle to put any weight on.

There's a paleo granola they stock in sainsburys and also a lot of the kind bars are low carb but making your own is better. I have some we make with sugar free dark chocolate chips that make a great snack.

I'm not type 1 but I do like brown rice with fillet of salmon, bits of onion and garlic chopped in with maybe boiled spinach or broccoli - brown rice I get from Sainsbury's at about £1.60, obv that's a packet not one serving, and salmon is about a fiver for two from Tesco, or cheaper still at Lidl.
That can get you going, it's so good I don't think you need anything else tasty. Do the fillet under a grill wrapped in tin foil though, don't fry it.

Oh, and you probably know this but when you reduce carbs your blood sugar profile will change and you may need to titrate your basal as well as your meal bolus (assuming you're on basal/bolus regime). In the absence of carbs you will probably need to bolus for the protein because of gluconeogenesis but may well hit your blood sugar differently in timing. Hope you have a Dexcom or Libre CGM, if so the patterns will show up pretty quickly
