Low carb desserts without artificial sweeteners

Anyone have any low carb non upf recipies for cakes, biscuits, or other puddings? I was wondering if these exist e.g using almond or coconut flour and then relying on fruit/veg e. g beetroot to provide the sweetness? The only ones I can see online rely on stevia which I am not keen on due to the erythritol.

the only low carb dessert that I've ever wanted to eat twice is a classic chocolate mousse (just eggs and chocolate).

I find coconut flour really unpleasant.

  • Square or two of high Cocoa chocolate (look for one without emulsifier)
  • Full fat Greek yoghurt or cream with berries
  • have some cheese instead

You are going to be limited by the fact that most desserts are by their very nature sweet, which doesn't generally work with low carb

If you're not worried about fat content, you could do a choc pot- it's equal parts chocolate and double cream. Heat the cream then add the chocolate. Let it sit then mix until it comes together. Portion into ramekins and cover - it keep in the fridge for a few days.

Forgot to say, it's lovely with berries or even orange.

Erythritol is low carb - do you want to avoid it for taste reasons? In that case, you could always get stevia drops that don't contain erythritol, although stevia can have an aftertaste reminiscent of licorice, which I'm personally not keen on.

Have you tried monk fruit sweeteners? IMO the best low carb (and natural!) sweetener by far. For example, the Organic Monk Fruit Liquid Sweetener from NOW Foods is nice and comparatively well-priced.

My go-to dessert in summer is a homemade frappuccino. Just put some cold espresso or cold brew coffee, some cream and/or milk, some vanilla extract (optional), a generous amount of ice and a little bit of xanthan gum in a blender.

Thanks everyone. The chocolate desserts with eggs or cream sound like a great idea.

I was not keen on Erythritol due to the recent health concerns. May look into monk fruit though, I have not heard too much about this although I thought it was banned in the EU for some reason.

I was wondering if anyone has baked anything like this at home? It doesn't seem to have any sweeteners in it and just relies on the carrots but I have been unable to find a recipie for anything similar https://8foods.co.uk/products/paleo-spiced-carrot-cake?variant=37788592275621

I make cheesecake.

BASE - Almond flour with a few chopped pecans or brazil nuts mixed in, bit of melted butter to bind. Freeze.

CHEESECAKE MIX - teaspoon of a sachet of low cal strawberry jelly crystals mixed with boiling water, let cook. Chop some strawberries and mux into cream cheese and double cream. Mix in the cooled jelly liquid.

TOPPING
Decorate with sliced strawberries and raspberries. Pop in fridge to chill.

I sometimes make above but leave out jelly and just add melted high quality dark chocolate so a chocolate cheesecake but top with strawberries.

Longingforthesummer · 24/06/2023 19:42

Jelly mixture meant let cool!!!!

Bubbles254 · 24/06/2023 20:32

Wow thanks longingforsummer don't know why I didn't think about cheesecake, that is a great idea.

I used to make paleo bakes with a basic mix of almond flour, eggs, milled seeds, and dried fruit. If you add enough fruit, every bite has some sweetness. You can vary the mix to make scones/biscotti or I once made a dairy free, grain free, sugar free fruit cake/Christmas cake using this method. If you’re not eating sugar or sweetener then it’s sweet enough.
you could also sprinkle a mix of ground almonds and cinnamon over stewed apple and make a little crumble. Again, if you’re not eating sweet stuff it’s plenty sweet enough.

I also love Greek yogurt, strawberries and peanut butter.

You can also blend coconut milk from a can with frozen fruit to make instant ice cream.
