Chilli Con Carne alternatives

I really fancy a chilli con carne soup but am wondering if the beans are too carby.

Do you leave them out? I'm planning on adding a red and green pepper and mushrooms too.

Hi, I leave out the beans as our family don't like them and just add a tin of normal beans, orange and yellow bell peppers blitz it all up and tastes great.

My kids and DH won't eat the beans so we add sweetcorn. Am sure it's not the done thing but I think it tastes fine.

For an easy and low carb chilli - brown 400g mince add a kallo stock cube , one generous tablespoon of tomato purée then add 1 teaspoon each of cumin, coriander, paprika and cayenne pepper, stir and then add 1 tin chopped tomatoes and then fill the can about a third with water and add, bring to boil , simmer for about 40 mins and then serve.

I always make it with mushrooms instead of beans, it seems fine to me.

I make it as you would a normal chilli con carne though, I can’t really imagine what it would be like as soup to be honest

I cba to mess about with cauliflower rice so googled and chilli soup came up. I've never made it before so no idea what it will be like. I was going to roll the mince into little tiny balls as I dont think mince floating about in liquid sounds nice but I might just make it with less water and just eat it on its own without rice.

I really like kidney beans. I've actualy got a craving for that nasty stagg chilli form the tin but you can't get it where I am and I'm trying to eat healthier 😂

It depends what you mean by low carb. I tolerate beasns, pulses and legumes in my own version of a low carb diet (which is probably a bit higher than some others) because I know they are good for me and dont give me the same problems as other types of carbs (rice, pasta, bread, pots)

I'm tempted to add corn but i think it will be far too carby with beans and sweetcorn.

It sounds horrible as soup. Just make chilli without the beans, add mushrooms if you like, and eat it in its own or with home made guacamole (mashed avocado with lime or lemon juice and salt is fine) and a spoonful of plain yogurt on top.

M&S tinned chilli is nice. More expensive, but it has chunks of beef, not mince.

This is the way I'm leaning, not ultra low carb, but juts no rice, pasta, potatoes, biscuits/cakes etc. I'll still eat beans and lentils and see how they affect me.

Tbh, I think I'd prefer it thicker too.

When I did keto I could stay in ketosis with chilli with kidney beans in, never had rice, just cheese on top, yummy

I’d just make it as normal, but maybe fewer beans. I usually bulk it out with a whole can but perhaps just use half or make a big batch so the beans are more sparse. Then eat with sour cream, cheese, avocado etc

Id definitely have cauliflower rice though, as I find it all too rich without something a bit bland to go with it. Or if you can’t be arsed to blitz the cauli just cook it as normal and eat on the side.

Thanks, we aren't in the UK., One of the supermarkets does do frozen cauli rice but i'd rather just have the chilli on its own.

When I make it I add extra mushrooms but leave out the beans. We have it on its own, with lots of grated mature cheddar on top, full fat Greek yoghurt and some extra jalapenos (from a jar).

I added a small amount of kidney beans, red & green pepper and had it with a side salad. I forgot to add cheese 😩😖
