Dinner ideas

I've been doing low carb since the beginning of the year, and have lost 5kg so far. I've still got a long way to go though, and I'm already finding I'm just cycling through the same few dinner ideas. I'm hoping for some inspiration!

I'm not a fantastic, creative cook, and I don't want to spend hours in the kitchen.

So far I've got:

Baked salmon with stir fry veg

Roast chicken with 2 veg ( 2 of broccoli / cauliflower / Brussels sprouts / green beans / asparagus / cabbage / small amounts of carrots)

Gammon with a fried egg and veg

Steak, mushrooms, fried tomatoes

Sausages and veg

Cooked breakfast for dinner

White fish with cheese sauce.

DH is eating the same as me at dinner (not for other meals though) and he's enjoying it. I think I'm missing crispy potatoes and fried rice! It just all feels the same and I can't even get a takeaway!

Inspire me a bit please?

Cut a chicken breast nearly in half & spread the inside with cream cheese - although I sometimes thinly slice a soft cheese & put in.
Wrap the chicken in a couple of rashers of bacon, overlapping slightly but try & cover as much as you can to stop it drying out & bake until cooked & bacon is crispy. Maybe 20-30 minutes. Very yummy, sorts out the low carb eaters & my DH likes it too.

I used 'keto manager' on my phone which helped a great deal. It also has a low carb (not keto) option to help add up the carbs, fat, protein etc of products and whole recipes. When I was going a low card/keto diet, I liked:

  • KFC style chicken. Using ground almonds instead of breadcumbs. Super easy as you just double coat in the same mixture- no need for flour, egg then the crumb mixture
  • low carb coldslaw. Blitz all the veg in a blender and add a low carb mayonnaise
  • Cauli rice with curries and stir fries. Either home made or the frozen bags from iceland, tesco, sainburys etc

I highly recommend the Keto Kitchen recipe book. There are so many amazing dinner ideas in this book. I've made most of them and they're all delicious. Not too hard to make either. The author used to work as a chef with Heston Blumenthal so she knows her flavours well!

I’d add to your list

cauliflower cheese (I toss the cooked cauliflower in yoghurt and then top with loads of cheese)
Aubergine parmijano
Smoked salmon and asparagus salad
Low carb lasagna made with roast aubergine instead of pasta
Whole baked Brie with salad

I like roasted green beans and/or tenderstem broccoli. A bit of olive oil and some garlic on the veg then just put it in the oven. Spread it out well and it gets a little crispy/caramelised.

Asparagus, pan fried with some seasoning, a bit of butter is delicious. You can use it to dip in runny eggs too which is bloody lovely.

Definitely look at aubergine! There’s a baked aubergine with yoghurt and harissa here which is good. and agree with aubergine parmigiana.

Halloumi recipes could be good. Halloumi and griddled courgettes perhaps? or with roasted tomatoes and peppers. Add pine nuts, yum.

Soup - vegetable soups with cream or cheese on the top. Can be batch cooked easily. I find a thick soup doesn’t need bread.

Burgers without the bun!

Omelette or Frittata (without potatoes)

Creamy mushroom stroganoff (lots of recipes online). Chicken fried cauliflower rice.
Spiralised courgette with bacon, mushrooms and half fat crème fraiche.
Ratatouille.
Stuffed field mushrooms (goats cheese, herbs and garlic)
Omelette pizza

Thai curry with cauliflower rice
Egg fried cauli rice
Curry
Chicken with blue cheese sauce and veg
Stuffed peppers
Chilli with keto cornbread or cauli rice
