Low carb for long term maintenance-advice please

I have lost over 2 stone on LCHF and am now 8st 7lbs. I am not tall 5’3 and have small frame, so this is about right. I have continued to lose weight over the last month although I was planning to maintain at just under 9st. I am pescatarian but don’t eat much fish. I have realised that it was too easy in the past for me ‘fill up ‘ on the carb part of a meal and not eat enough veg. I want to continue to eat LCHF for maintenance. Do any of you experienced people do that and how do you maintain on this? What do you change to stop you losing weight? I also dont eat breakfast and wonder if I should try adding breakfast.

A typical day would be
L egg or cheese. Avacado, salad and olive oil dressing. Berries and full fat Greek yoghurt.

Snack nuts and or full fat Greek yoghurt
Dinner veg with cheese sauce made from cream cheese. Full fat Greek yoghurt.

I eat a lot of veg every day. Should I add in more pulses or a few complex carbs like quinoa. I am really interested in what those experienced low carbers eat in maintenance.

It's all about trial and error, really! Unfortunately with a low carb diet there's no 'one size fits all' as everyone has different levels of tolerance for carbohydrate.

I'd start by having one meal a day with higher carbs - probably pulses or legumes to start with - and see what happens. You may find that can easily tolerate those without much impact on your weight.

The other important thing about maintenance is to accept that you'll never stick at one weight! Your body naturally fluctuates day-by-day. But set yourself an upper limit beyond which you're not prepared to go - I'd say half a stone higher than your target. Weigh yourself regularly, so you are monitoring things, and if you reach that upper limit, then you know you need a few strict days to get the weight back down again.
