Low carb/keto and packed work lunches

Last week I cooked a meatloaf on Sunday, and took a slice to eat at work for lunch each day. I feel that this worked pretty well as it's easy to transport and non messy once I'm at work. Salads can be too laborious and messy to eat plus they need to be prepared daily.

Are there any other meals I could prepare in advance? I thought of soups, which will also keep in the fridge for the week and I can take in a thermos and drink.

A big Frittata. Add whatever veg/meat/cheese you like and some cream. Can be cut into slices and eaten hot or cold.

I had boiled egg/mayo chicken and mayo. Salad with tuna maybe. Also sometimes just took some cheese/nuts/cucumber

It’s ok for 3 or 4 days, or it’s fine to freeze for a month or two. Eggs store pretty well. You can keep hard boiled ones in your fridge for up to 7 days.

I make up a few boxes of quick no mess salads e.g. rocket leaves, halved baby tomatoes, cucumber chunks, topped with loads of bite-sized chicken, ham, sausage etc. On the morning of use I put a blob of something like Dijonaisse, mayo, mustard etc.

What did you eat with the meatloaf?

@User45 nothing really. I don't really have the time to eat as such, I just take a few bites when I can. The meatloaf, cooked from scratch by me, has lots of vegetables in it. It's very handy to transport in slices and then just take bites from it when I can. Sometimes I'll also have a yogurt.

Cube a whole celery, 4 carrots, 2 red peppers. Sweat in butter and olive oil for 25 minutes. Leave to cool.

Mix a pack of mince pork and a pack of mince beef with rosemary, 2 chicken pots (or 2 stock cubes completely dissolved in very little water), pepper, grated parmesan, 4 eggs. Add the vegetables to the meat and mix.

Poor onto greased loaf tin. Cook in oven, 180 degrees ish for 50 mins, ish.

It is tasty and very very filling.

When I go into work I just stop by M&S and buy these One pack is the perfect amount to keep me full up for the rest of the afternoon. I'm only going into the office once a week these days though, so haven't got bored of them yet :)
