Hello, I’ve just been diagnosed with pcos and low gi is apparently the way to go to combat the insulin resistance problem I’m experiencing to stave off potential diabetes in the future. My BMI is 28 so I am overweight and would like to lose about a stone to get back in healthy range, but my main focus is really reducing the insulin problem as that’s apparently what makes the testosterone higher and worsens the pcos symptoms, like hair, acne irregular periods. I’m really bad at dieting and I have no willpower, I won’t stick to things like chickpeas for lunch and lentil stews for dinner etc- it will make me very grumpy anyway! I’m wondering if a day that looked like this, while not necessary low in fat or calories, would be a reasonable approach to low gi if anyone knows?
Breakfast- granary/sourdough toast with peanut butter.
Drinks- Latte (two over the course of the day with full fat milk and sweetener), tea with sweetener and semi skimmed milk, sugar free soft drinks/ squash/water.
Mid morning snack- Apple
Lunch- Two egg omelette with cheese, ham, tomatoes, peppers and onions.
Dinner- egg noodle stir fry with veg, chicken, soy sauce and garlic or lamb steak with veg and small amount of new potatoes.
Dessert- few squares of dark/milk chocolate (I’ve read that because of the fat content chocolate doesn’t make blood sugar levels soar as much as some other desserts).
Would appreciate anyone’s input on whether that would help me on the insulin front.
