Low-carb diets

Low carb ethical meat very expensive?

Hi,
We eat low carb but I'm finding it really expensive.
We have a coconut milk coffee for breakfast (high quality coconut milk, organic coffee beans)
Lunch is cheaper, usually eggs - boiled/ omelette - occasionally homemade hummus and carrot sticks
Dinner. High welfare meat. So no pork. A chicken occasionally. Mainly organic lamb and beef.

Veggies are organic.
Snacks are dark chocolate, nuts, nut butter, coconut oil

My DH insists on organic, high welfare food which I agree with in principle but it's just so expensive.

Any tips/ advice?

Or do I just need to realize/accept that eating good quality food is expensive?

It is really expensive. We don't eat meat every day because of that. Some things we do:

The mythical mn chicken - the high welfare chickens from our local farm shop are around £13 but they are huge! And easily do 4 meals - roast, pasta, pie or curry.

Conversely, Lidl do an organic chicken for £5 which is small but will do one meal and a lunch for me comfortably.

Good quality butchers' mince can be stretched by adding lentils or beans. Good quality sausages (we get ours with our pork) make for a cheap meal, I brown them then cook them with lots of veggies, add a tin of tomatoes then add orzo pasta for a one-pot meal.

Weigh your portions - I allow no more than 100g pp which is generous, but you may be eating a lot more than you think.

Have you got a freezer? Look for deals and things going out of life.

Thanks Lonny . Good suggestion to look for and freeze short dated meat.

DH doesn't want to eat root vegetables ( carbs) or lentils/beans (can't remember why). No tinned tomatoes (something to do with the can) .

No pasta / bread (wheat). No potatoes. Occasionally rice.

We literally have meat and green veggies for dinner the majority of the time. I can't find ways to bulk things out.

Set him a budget and make him do the shopping and cooking? Because it sounds like he's being really stupid unrealistic.

Do you know what? You're right Lonny. I have been doing the shopping and trying to budget, discussing the budget etc. But actually, I'd be happy to eat "healthily". I know that's different for everyone. But I can only stretch money so far.

You're right. So DH can be in charge of shopping from now on.

His attitude wouldn't be unrealistic if we were higher earners. But it's like expecting vintage champagne on a house wine budget!
