Soft food diet

I have to eat a soft diet for 3 months, apart from mashed/scrambled eggs... what low carb can I eat that needs minimum prep?

I have a nutri bullet, a fridge (with a minuscule freezer) & a microwave...

So grateful for ideas.

I've just had an impacted wisdom tooth out and can't even open my mouth to get a spoon in. This is going to be bad enough for a week or so , so you have my full sympathy! I am of no help though as I was thinking the same thing today.
Yesterday I had a boiled egg mashed up with some butter and 2 tubs of almost melted low carb ice cream 🤤
Just coffee and cream so far today and wondering what I can manage to tip in my mouth today😭

I'm wondering about making some sort of runny guacamole...

If you're near an Iceland they do riced cauliflower which is lovely with a nice sauce. Also waitrose do a cheese called saganaki which when fried is exactly like cheese on toast but carb free. Mince bolognaise made in bulk with melted cheese. Soups! Love soups.

I'm still struggling and just don't fancy anything, which isn't helping 😣 except that low carb ice cream....

What about some kind of mash? Cauliflower, or celeriac, or celeriac with leek (a personal favourite!). You could also make more of a meal out of it by stirring in the grated cheddar, and then making a bake out of that.

Soup mostly. Scrambled eggs & sandwich fillings if I'm out & about.

Thanks BIWI it's the lack of an oven or job which makes things trickier.

Any fish poached doesn't need to be white fish. Works well in scrambled egg too.
Chicken or beef broth.
Mashed avocado/guacamole
Cottage cheese or quark or full fat yoghurt or cream cheese
Beef mince can be really soft if cooked low and slow, or some other slow cooked meat

Egg mayo, tuna mayo, tuna in olive oil, mashed sardines in oil, flaked kippers (microwave)

Yes, not having an oven/hob does make things a bit more difficult. But you can still cook veg in a microwave - so you could make a mash and stir/melt cheese into it. Just don't do the baking bit afterwards.
