Low-carb diets

Low carb but child-friendly?

I have family visiting for a few days over Easter, including an 18-month old and an 8-yr old. The older child is on a low/no carb diet, as advised by hospital consultant and dietitian to treat a serious medical condition that will easily result in obesity.

Can anybody give any ideas for easy low carb recipes ideas that are likely also to be acceptable to the children? We are likely all to eat together at lunch, and then dinner is likely to be kids earlier and adults after they are in bed, so something that can be reheated/kept warm etc would be perfect.

I am disabled and live alone so minimal effort recipes would be hugely appreciated, such as slow cooker recipes, prep-in-advance, reheat or whatever.

ask the family coming for suggestions about what they do food wise and what their children like.

Slow cooker, perfect. Just put the veggies and chicken/whatever in with stock (and have potatoes on the side for everyone else).

Ham and cheese wraps - wrap up cheese or any filling you like in thin cliched ham or other cold cut that is thin enough to roll. Egg mayonnaise made with cream cheese, salad veggies etc.

Lots of soups are low carb. Make or buy. Can you bake? I make almond flour bread to have with soup, loads of recipes online if you google.

If possible, i would like to avoid asking family as they have been struggling a bit recently with ideas so I was hoping to find some new ideas that might inspire them...?

So far I have thought about these for dinner but don't know if they are child-friendly enough?!

  • lasagne using butternut squash sheets instead of pasta. anybody tried courgette or aubergine instead?
    Can prep this in advance.

  • campfire stew from Pinch of Nom. Slow cooker.
    Does this need mash? Thought perhaps cauliflower mash?

  • sausages with cauliflower cheese. Can the cauliflower cheese be cooked in advance? But also cauliflower above?!

Hunters Chicken or chicken cacciatore.

Lighter meals:
Crustless quiche.
Cold cuts etc.
Soup - but is that enough for a child, without bread?
Omelette.

Those ideas sound great.

A few of the supermarkets do cauliflower rice these days. I’ve seen in it Waitrose, Tesco and Aldi. Saves grating cauli yourself which makes an awful mess. I’ve seen zucchini spaghetti also.

I make French toast with that bread for breakfast.

If you live near a Wholefoods they sell cheese crisps. M&S have crispy bacon and crackling crisps in the deli department.

Definitely try the almond flour bread.
Chicken nuggets again with almond meal or pork scratchings Broken down to crumb size.Serve with salad and coleslaw.(nuggets freeze well so you can make in advance)
If you Google low carb there are sites with ideas,most not that child friendly except for things like flour free chocolate tort and no cook cheesecake which may cheer them up a bit and godown well with adults too.

Tacos or fajitas with cabbage leaves instead of tortillas.

Second the almond flour bread. It's dead easy to make.
