I am in need of inspiration.

I am feeling miserable as I have reflux problems and have been advised to loose weight and eat low carbs.

Are there any great low carb cookbooks you would recommend?

What are your go to recipes?

Look at Low carb in the UK Facebook page if you're on FB as it has lots of practical advice

I found this a useful visual guide when I started low carb 6 months ago. (Dropped over 2 stone in 3 months and maintained that weight since)

Eat lots of foods from the green range, not so many front the orange range, avoid the red range

Track what you're eating on MyFitnessPal

Also drink lots of water. Take electrolytes. Expect to feel a bit rubbish if you're used to lots of sugar but it does get better Smile

I tried to keep it as uncomplicated as I could when I started

My go to meals are:

Cauliflower cheese and nice ham

Fajita bowls, fajitas filling usually peppers, onions, queen pieces, spices. Serve on lettuce with soured cream and cheese

Spag Bol bowl as above, just serve on salad with cheese on top

Roast dinner - replace potatoes with cauliflower cheese, lots of green veg, I still have carrots and normal gravy with it

Ready sliced Edam cut into triangles, put on parchment on a baking tray, sprinkle with paprika and bake for about 10 minutes. Makes a nice "cracker" with pate for snacks. Plus olives

I eat a small bar of Aldi 85% dark chocolate every evening

Or it can be melted and extra thick cream stirred into it and chilled in fridge, makes a mousse type snack

Haloumi fries. Grill strips and use as soldiers with boiled eggs

That all sounds yummy! I LOVE cauliflower cheese!

@SmiledWithTheRisingSun just beware that low carb cauliflower cheese is made differently from 'normal' - the sauce is double cream and grated cheese, rather using a roux (i.e. flour-based) sauce

I've been following this way of eating since January and have lost 9lb and dropped a dress size. I am trying to do 10000 steps a day too-don't always manage it!

I'm not following a particular plan and I'm sure some people will say somethings aren't strictly low carb but what I'm aiming for is high protein.

Breakfast- alpro coconut yogurt and raspberries , coffee with whole milk

Or if on the run a protein bar eg graze or nut kind and a coffee

Lunch- salad with ham, eggs tuna or combination of followed by yogurt

Or if at home kale scrambled eggs and bacon or smoked salmon

Dinner- mainly whatever family have but replacing potatoes, pasta or rice with veg.

Last night- 95% sausages and ratatouille (family had pasta too)
Tonight- chilli con carne with cauliflower rice
Tomorrow- chicken breast wrapped in Parma ham with green beans and sweet potato wedges

I'm jumping back into this after not doing it for ages.
Some meals I have are:

Thai Pad Krapow Moo with baby gem lettuce.

Slow cooker orange ginger beef (a thriving on paleo recipe) with vegetables (I like roasting things like sprouting broccoli).

Pesto chicken and courgette noodles

Steak with portobello mushrooms and a nice sauce and a side salad.

Fajitas without the wraps but all the sides.

Thai green curry with coconut cauliflower rice.

Smoked Haddock and Broccoli mornay (made with cream as above cauliflower cheese mentioned) with veg.

Greek Salad or caesar without croutons.

Crustless quiche or keto breakfast muffins are good to take to work for lunch. Or I just take hard boiled eggs, and a selection of ham and cheese.

The only thing I'm not very good at is I make a smoothie for breakfast and although it'll have spinach or kale in it I do a bit of banana, strawberry and mango for sweetness.
