Been low carbing for 3 weeks + C25K.
Got over the Keto flu hump.
Lost 7lb in the first week and now up to 10lbs- seem to have stalled a bit.

Not hungry
Heart palpitations that have plagued me for 5 years gone.
Heartburn/ acid reflux gone.

So many good things about this WOE but

I am soooo bored....

I am so fed up with not having bread- have tried about ten different recipes for Keto Bread but they are all foul-too eggy or cheesy.

I want something crispy that isn't overly seedy or nutty.

Want something with bolognaise that isn't bloody spiralised. ( sorry but I have yet to find a way to cook courgette that doesn't end up as a wet soggy watery mess.

Can't have roast potatoes or parsnips or stuffing or with my roast Just vegetables or bloody sodding cauliflower cheese.

No fruit except a few measly raspberries.

Doesn't help that I absolutely fucking bloody hate cooking.

Really fed up this evening- did a curry for DH I have just a bit of chicken with minimal sauce. Wasn't that hungry ( please don't suggest cauliflower rice- it's hideous)

I know this works for me and health wise I feel better but I really really don't think I can do it for much longer.

Low fat low calorie diets don't work either- can't bear being hungry

Someone persuade me to stick with it.

Got over the hump and kept on with it.

Just weighed myself and am down 2 more lbs this week! So a total of 12lb in 4 weeks. Not too shabby!

Cauli Flower I found to be the best. I'm a big portion eater, but I managed to lost 20lbs in 3 months. It was a combination of routine exercise and controlled sugar&carb meals.

I have been doing low carb/keto for months now (for other health reasons) and have lost loads. I have kind of forgotten how to snack, which I guess is a good thing, right? Yes, it’s boring, but you get past even that. It just becomes your way of life, I think. You really begin to wonder how much food you were mindlessly chucking down your neck when you can’t have actually been hungry.
Sugar-free almond butter on celery is good if you like it. Just watch portion sizes.
Sliced meats like salami, ham, etc.
Look up other types of low-carb diets like paleo/keto, etc on Pinterest and look at recipes.

Justilou1 I sort of get what you mean about not bothering to snack any more. I certainly don't obsess over food like I used to and when I do fancy something i think how fleeting the pleasure would be and if it was really worth it.

I am feeling so much better on it. Sleep great, no heartburn or stomach aches, drinking less, ectopic hear beats gone.

I think the fact this is so unforgiving actually works for me- I can't just have one biscuit or cake so I don't bother.

Sticking to it for the moment and when I get to the point where I can't sustain it then I will move over to 5:2.

OP, just a quick tip in regards to courgetti; don’t cook it! Just put it on a plate and pour your hot sauce (bolognese or whatever) over it and stir. It’ll warm up and soften slightly just like that, and the texture will be perfect Smile

I have just started studying full-time and was eating lunch with a group of women, put my lunch away when I was full and was teased by one of the others... “Is that all you’re having?” I explained that I was full, and I might have some more later if I was hungry, etc... and one of the others piped up with “Oh, you skinny women make me sick! That’s not enough to feed a bird!!!” (Good-naturedly - it’s all in the tone of voice.) She was eating pasta carbonara - not a large serve for an adult, but is very overweight. I must have looked blankly at her, and she asked if she had offended me. I explained that I had never been called skinny before, and everyone went quiet and stared at me. They all said “Well you are!!!” I had to explain that I had lost 60kg from my body in the last 18 months, but I don’t think I’ve lost it from my mind yet. Don’t push yourself too hard.

Btw, my portions have dropped and dropped over time. (Something to do with natural satiety and something to do with boredom, maybe?)

With the courgette you literally just have to show it the boiling water, maybe 20 secs in and out. And then it’s delicious.

Thanks- I will try that.
Total loss now 14 lbs! ( in just over 5 weeks)
Still got a fair bit to go but am looking at it in stages.
5lbs to being out of the obese 1 BMI category is my next goal.

Test will be today and tomorrow as am staying in a hotel tonight and a funeral tomorrow where there will be a buffet!

Planning to have a steak with extra veg tonight rather than potatoes and hoping there will be some meat and cheese at the buffet.

I stir fry courgetti in a little coconut oil for a couple of minutes. Stops it going all watery!

Green beans with a little oil and salt spread on a baking tray, gas 6 for about 20 mins or until slightly crispy.

water chestnuts in a stir fry add a really crispy element

Thanks- I have just discovered the delights of creamed cabbage! Delicious.
Have also discovered a sort of Keto roll that is not eggy and has quite a decent crust on it. One of the ingredients is psyllium husk which is also high in fibre.

It is the one on Diet Doctor
but I adapted it slightly as it seemed very runny ( because I think I had used large eggs) added a bit extra almond flour and psyllium husk( I managed to get some blond husk which doesn't turn the bread purple! ) they took quite a long time to bake- I cut one open after 40
Mins and they still seemed a bit soggy so put them back in for another 20 mins.

I am going to try it again tomorrow and experiment a bit with xantham gum and a little bit of yeast ( as this is supposed to give it a more bready flavour) but the crust was really nice and it wasn't eggy at all ( only uses eggs whites) I made a sort of cheese toasty with marmite this morning for breakfast which was really satisfying.

Post how you get on please BrigitsBigKnickers, I make 'oopsie bread' for dh, I can eat one as soon as they come out of the oven but not once they've cooled, too eggy and slightly wet I feel.

Ok- great success!I used the Diet Doctor recipe with a few changes:

  1. I used 2 large egg whites. ( recipe says 3 but not what size- I found 3 large egg whites made the mixture too soggy.) I followed one of the reviewers advice and added the egg whites last. So mix the dry ingredients with the hot water and cider vinegar first for about 30 seconds and then add egg whites and mix for another 30 seconds.

  2. I used 6 table spoons of blonde psyllium husk (recipe says 5)

  3. I used a little less hot waster ( prob 3/4 of a cup as opposed to 1 full cup.)

  4. I added about 1/2 tsp of quick yeast ( which is for flavour as opposed to helping it to rise.)

  5. Baked for about an hour on 160 C and about 10 mins before the end made a hole in each roll with a knife to dry out the insides a bit.

They came out really well!

Been eating the yummy Keto rolls for a week but have been suffering from stomach aches... Something I have not had since doing the low carb WOE.

Turns out this can be a symptom of eating psyllium husk.

So disappointed as I thought I had finally found a bread substitute.

All other Keto breads I have tried so far are too eggy and soggy. 😪

I’ve cut out bread, pasta and rice but I have kept eating fruit. There’s no way I can’t eat fruit. I still have had weight loss and reduced appetite so all still good.

I’m not a fan of pre-prepared cauli rice or cauli rice which is steamed - it’s soggy and a bit smelly like this for my liking.

However, I cut it up using a large sharp knife to make quite coarse pieces and then fry it in a really hot pan until it gets a bit of colour (and flavour) to it and then add a splash of boiling water, turn heat down, and steam for a minute or two until the texture is right for you.

I like it like this with a chilli or pasta type sauce

Or I sometimes do it the same way but fry some mustard seeds and spices and it’s nice with curry

I know what you mean about missing crunch! I make some keto crackers from the diet doctor website. They’re fab for when you want cheese and biscuits (or cheese spread, which I like for a snack!), or may even work with dip
