I think focusing on the LC, but not too much HF, as I'm probably going to be the only LCHF-eater there.

Cheesecake, every time. Pinterest has some really good recipes. I usually make individual ones in glasses as they are easier to make with the nut crust.

As for cheesecake...I luuuuuurve baked cheesecake. I've never used Stevia (I'm a bit hardcore on sweetness with LCHF because of needing to reeducate my tastebuds). What's it like? Could I make a baked cheesecake using it?

And I'm not sure whether I should thank you for telling me about Oppo ice-cream Wink because I've downloaded a voucher, and might just be passing a Waitrose later today...

Beat up a load of double cream into ice cream consistency, stir through berries & juice a couple to get a swirl through it. Freeze. It's lovely ice cream.

Alternately, melt dark chocolate & coconut through it and stir through dark chocolate shavings / chips.

Stevia is horrible. It has a bitter bottom note.

Double cream whipped up with some 85% dark chocolate (melted with a tiny amount of butter) and mixed together, it's like chocolate mousse and delicious served with a couple of raspberries. It's so rich so you hardly need any to feel satisfied.

I serve cheese alongside fruit (cherries, grapes, black berries, sliced apple and pear) and really good mixed nuts (and then oatcakes, butter and chutney for those who want it). It looks super decadent!
