Help! The Easiest of Easy Low-Carb Snacks/Food Ideas Needed.

Sad confession: I'm very lazy. I've been checking out the low-carb bootcamp recipe thread, but the chances of me making anything close to a recipe are minimal. I hate ready-meals, but I love, simple, basic foods with little prep needed.

This week, I've been eating greek yoghurt pots, homemade guacamole, smoked salmon, packs of microwavable vegetables from Sainsbury's, and varieties of green soup.

There must be people like me out there, who snack more than they eat and can't be bothered to cook a whole meal for one lone low-carber.

What are your staple snack foods?

I assume you've already thought of all the obvious things, pepperamis, sliced meat, cheese, olives, boiled eggs, cooked chicken legs etc?

Home made soup is good, approx 100g low carb veg, cooked with a quixo (from Aldi, 0 carb) stock cube and a dollop of sour cream. With a muffin in a minute (Google for a recipe, takes literally a minute in the microwave) is quick and filling.

Omlettes? I do one with chorizo, prawns and shallots which is really good. buttered spinach on the side to make a meal.

Salads as well, my favourite is a handful of salad leaves with 100g cherry toms and a ready cooked smoked salmon fillet (Aldi again!) and a dollop of home made stick blender mayonnaise.

I don't snack, but my favourite quick and easy thing with any meal is buttery courgette ribbons. It takes about two minutes to julienne the courgette and about three minutes to sauté it in butter. I love it with prawns or scallops on top, as a side dish with meat, as pasta, etc. My husband is even happy to cook it, although he still won't eat it!

Ooh, thanks for all the suggestions! I love the idea of those minute muffins. I hadn't heard of those. A chorizo omelette sounds quite good too. I love cured meats (shameless fat addict here).

And ah, courgette pasta! I had that YEARS ago on a militant vegetable craze, but I went a bit far and topped it with the foulest ultra healthy homemade basil pesto you can imagine. The entire thing was a virtually calorie free plate of depression. I bet it would be way nicer in a tasty buttery sauce. And I love the idea of prawns on top. Or even sour cream, leeks and pancetta. Or maybe even bolonase. Dear me, you've set me off now! I never thought I'd be enthused about courgettes.

Just thought of another one as I'm planning my lunch. Handful of fresh spinach wilted in butter, add ricotta (I use a 100g pot from Tesco) and a handful of grated cheese Stir til all the cheese has melted.

It's a small portion but full of fat so quite filling and keeps me going for ages.
