Really struggling with bread

I've tried making the low carb bread (flax seed and almond flour) but its nothing like real bread.

I used to live on bread. literally 6 slices a day. Toast for breakfast/snacks, sandwich for lunch.

Actually thinking about it, its sandwiches that I mainly miss. They're so easy!

Maybe long-term it's easier to avoid 'bread' altogether than to make a pseudo-bread that you don't really like. I sometimes make flaxseed and almond flour bread - but it tends to be mainly for the benefit of other people (my Mum is gluten-free, my husband is mainly low-carb but still likes bread) than for me - I used to love bread, but have just got used to not making it part of my day.

Other snacks that have the crispy/crunchy savoury hit:

  • Roasted salted nuts (limit the quantity - and stick to macadamias/almonds/other lower-carb nuts)
  • Pork scratchings

What do you usually put on your bread? Pate can be smeared onto celery or cucumber slices etc. Cheese is amazing eaten with a good green salad - I find now that any bread would be in the way of my cheese tasting. Saucisson and salami are lovely eaten with a slice of pickled gherkin.

You can buy really tasty low carb bread from the Avidlite web site, but it's very expensive. We've started buying the pitas - I don't eat them as they're too "processed" for me but DH, who has always been a bread addict, eats them every day and loves them.

thanks I'll have a look at the website you mentioned.

I mainly have tuna Mayo, Marmite or just butter on my bread. I think sandwiches are so easy when you can't be bothered/don't have time to do something else.

Dukan has you eating oat bran everyday - hes suggests you make it up into thick pancake-type things (galettes?). Good with smoked salmon! They keep in the fridge and make a fabulous portable breakfast. Not sure if any other low carb diets have the same thing about oat bran?
