I'm only two weeks in and getting bored of 'meat and'

So, breakfasts are no probs - I love eggs. (really love eggs)

lunch is either:
chicken and salad or
tuna and salad or
salami and cheese or
pork and broccoli or leeks or other green veg with cream or cheese or something like that.

tea is usually:
steak and salad
or, just like lunch.

And that's all the meals my brain can think of.

How low carb are you going?

I make quiche without the pastry and have that for lunch, or smoked salmon and soft cheese wraps, or make my own (low carb) soups, or leftovers from the night before...

Dinners I adapt regular recipes, such as bolognaise, slow cooked casseroles, roasts, I made a fabulous butternut squash recipe from the sainsburys magazine over Christmas, celeriac gratin, fajitas (without the wraps), shepherds/cottage pie with mashed celeriac/swede/turnip cauliflower instead of potato, frittata etc.

I have used specific low carb recipe books by bee rawlinson (linked to the idiot proof diet) but often go through my (many) recipe books and adapt (eg leaving out or substituting pasta, bread, rice potatoes (& some other starchy root veg) with less carby veg.

Ps - I've been on and off low carb for years, so am used to this way of eating, but I definitely remember how hard it was at first to work to the "low carb rules" without eating the same thing day in/out.

Have you tried the pig2twig forum for recipe ideas? They're really experienced and informative.

yes, it's pig2twig that I'm following. Kind of. i'm having a square of dark choc and occasional raspberries.

isn't a quiche without pastry an omelette? Grin

Soups! I've made carrot soup this week and roasted pepper soup last week. Was getting sick of salads myself.

I've also done bolonaise last night but had it with a large salad and that was different but yummy.

I made a celeriac soup a couple of days ago, but I just don't fancy it without bread. I'm starting to really miss carny textures I think.

I'm struggling too. I'm on bootcamp, but already sick of salad for lunch and meat and two veg for dinner. I'm also a massive egg fan, so breakfast is easy.

I'm eating WAY too much tuna and I struggle on the nights when I can't face cooking and would previously have had something quick and easy.

feesh - that's not good. You really need to start eating a more varied diet, otherwise you're not going to stick with it.

Have you read the recipe thread? Loads of different things there. You don't just have to eat meat and two veg!

When I first ate low-carb Paleo I found the meat + veg thing got to me too. Ways I vary it now:

  • Smoothie for breakfast (60-70g creamy coconut milk, 80g frozen berries, a raw egg) feels like a change from the meat/eggs + veg stuff
  • More different textures, sauces etc. Thai curry with cauliflower rice. Spicy salsa with meat. Thai-style minced pork served in lettuce wraps.
  • Dishes that feel more winter-warming than meat + veg like celeriac tartiflette or a stew.
  • Low-carb soups - I do spicy cauliflower with coconut milk for instance, then eat that plus some slices of saucisson, some chopped cucumber and a handful of lower-carb nuts for lunch.
  • If you're missing bread, this low-carb bread can be very useful. I've pretty much got used to eating without bread now, but it can be useful for lunches out, or situations where you have to adapt to non-low-carb people eating sandwiches etc www.thelondoner.me/2014/03/mums-low-carb-bread.html It's better toasted, imo.

This site nomnompaleo.com/recipeindex is very good for recipes. They are Paleo rather than low carb, so some contain more carbs than you'd want on pure low carb, but if you stick to the Whole30 ones and avoid sweet potato etc you should be fine.

I love stir-fried garlic prawns for dinner and they're so easy. Defrost frozen king prawns under running water. Then fry in a mix of olive oil and butter with garlic. Add lemon juice, salt, pepper, and cayenne pepper. Eat with a spoon so you get plenty of the butter mixture with each bite. Goes very well with a chopped avocado on the side. Dessert is often a few berries with lots of cream and a bit of Splenda on top.

The way I do it is by carb.

So potatoes twice, pasta twice and rice twice. Day 7 is one of the above or something else, pizza, enchiladas, casserole and dumplings.

We have pork/ham once, beef/mince once, processed meat once (meatballs, sausages, Kiev etc) and veggie or chicken/turkey for the rest.

This week was: fish, potatoes and med veg, out for dinner Saturday, cottage pie and veg, pasta and tomato sauce, teriyaki chicken, stir fry veg and fried rice, jambalaya, and chicken, ham and leek cannelloni.

I follow weight watchers too, so all are adapted lower fat, pointed recipes.
