Coconut flour hell!

Has anyone else experienced crippling diarrhoea after eating coconut flour? I have been experimenting with various recipes over the last three days and coincidentally have also been chained to the toilet for the past three days. Only just made the connection this morning as I was sitting there cursing my bowels.

I think the high fibre is just too much fibre for me.

Oh boy! I just bought a pack! I read so much about how marvellous it is that I got some in thinking it would be useful for the odd treat. I've tended to use ground almonds but sometimes they can be a bit heavy and they are high in oxalate which is a problem for me. The coconut sounded ideal. I will se if anyone else chips in before I try it and then I'll be careful. Thanks for the heads-up.

Never had a problem with it. Mind you I don't use loads and loads, maybe the odd cake or something.

It's pretty rough stuff. Yum though. I only have it very occasionally, and certainly wouldn't have it two days in a row!

Maybe you could build up to it, splitting the amount in your recipe with half almond meal or something else that you tolerate okay, and gradually increase?

Yes, I definitely think I was a bit gung-ho with my coconut flour consumption!

Think I will give it a rest for a week and then just use a tiny amount next time.

Sounds delicious though. I'm willing to risk my bowels. Where do you get it from? Haven't seen it in any of my local supermarkets (haven't actually looked, either ...)

No noticeable problems here, I have been using desiccated coconut to make milk and flour. I have had slight tummy pain after some tinned coconut milk before though.

I don't eat coconut of any type I get a bad belly ache too. Apparently it's the only nut that has saturated fat in it!

I use rice flour that's great for most things also spelt ,rye and Kamut they have low gluten if you're coeliac but are better to digest than wheat.

In cakes I also use almond butter with ground almonds. Lovely!!

Yes it's vegan too You can add chocolate if you like !

Ingredients-;

1\2 cup almond butter
1\2 cup molasses or maple syrup
1\2 cup light olive oil (or any oil you like)
half broken up bar of best dark chocolate
whole cup of ground almonds or half of almonds half of spelt or rice or kamut flour,
2 t spoons of baking powder
almond or rice milk to mix well. Spices if you like them. And whole almonds on the top if you fancy.

Method;-
Using a good solid large saucepan on lowest heat melt the first 4 ingred. and the spices, stir very gently. Cool then add the sieved flour and almonds and baking powder. Use milk to make it into a dropping consistency. Put into an oiled non stick cake tin. cook at 180 C. in the middle of the oven and keep an eye on it for 20 mins to 1\2 an hour. It's a bit like a brownie so it needs to be softish in the middle and coming away from the sides when it's done. LEAVE IN THE TIN till cold. enjoy Grin

Update to add that everything in my system got back to normal once I stopped scoffing the coconut flour. I always thought I had an iron gut, well I guess it finally met its match! I really under estimated how high in fibre coconut flour actually is.

Ground almonds for me from now on, although it's not exactly the cheapest ingredient. That cake recipe looks very tempting.

I get that with white cabbage too (coleslaw is a complete no no now)! I'm fine with green cabbage though Hmm
