I don't have any wildly brilliant recipes to share, but I will list my favourites in case that's any use.
Bolognese without the spaghetti (I use courgette instead - you can google this but basically use a veg peeler on a courgette to get long thin strips and boil for about 5-10 minutes then serve with the Bolognese)
Homemade sausages: fry an onion and an apple until the onion is translucent but not brown. Puree with a stick blender (not necessary if you chop really finely but I'm lazy) then mix with 1/4 tsp black pepper, 1 1/2 tsp salt and 1 tsp pork seasoning (schwatrz - I think its mostly sage). Mix with 500g of pork mince that's been kneaded to get rid of the stringlike consistency. Shape and fry or grill. I'm a bit paranoid about food poisoning with mince so I oven cook them for 20 mins then fry to brown them.
Pizza substitutes - I've tried meatza (google but basically sausage mix instead of the pizza base) and pizza omelette (omeletee instead of the normal base - surprisingly nice). These involve cheese so if you're paleo only then you shouldn't do, but I do primal as I like my dairy too much (and it helps add variety).
To be honest I've found the main meals okay on paleo, it's lunches that are easy to take to work and puddings. Most of the paleo puddings require expensive ingredients (coconut flour or almond flour or lots of nuts) and I'm a tightwad. So I settle for fruit and cream.
I've been experimenting with cooking fruit mixed with egg and sometimes cocoa powder but although I've enjoyed eating the results I wouldn't serve them to anyone else as they look dodgy - I think my catchphrase at the moment is it's nicer than it looks. The only pudding that I've persuaded anyone else in the house to eat is 'ice-cream' made by pureeing frozen bananas in a blender with a small amount of cream. If you add some cocoa powder you can make a reasonable version of chocolate ice-cream. I've tried with other fruits and although they tasted ok they've all been a bit watery apart from the banana. You can do it with non-frozen bananas as well to give a very runny but reasonably tasty chocolate mousse. If you're not doing primal coconut milk would probably work rather than cream.
Good luck with the diet - I feel so much better on it and have lost 2 1/2 stone without really trying in the space of about 5 months. I can't imagine going back on a normal diet again. I have to admit I still find it difficult sometimes to resist when the kids are munching on cake or biscuits but less so than at the start.
