Is there a good bread?

I've cut out bread, pasta, rice and lost 6lbs in 2 weeks so I'm chuffed, but wondering if there is a bread alternative that I can have as I do like toast/peanut butter in the morning and miss it!

Saw this recipe on a low carb for diabetics site, Im going to try it soon

Flax meal loaf. Weight of cooked loaf 742 grams.

Nutritional Information: If you cut this loaf into 12 thick slices each slice has less than 1 gram of effective carbohydrate, 5 grams fibre, 6 grams protein, and 185 calories.

Ingredients.

2 cups of ground flax seeds (280 grams)
5 eggs
Half a cup of water
One third of a cup of liquid butter
One table spoon of baking powder
One tea spoon of salt
Added mixed dried herbs

Method

Place the eggs in a mixing bowl and whisk. Add the butter and water.

Place the flax in another bowl and add baking powder, salt and herbs and mix

Add the wet mix to the dry mix and mix thoroughly. Place the mix into a non stick bread tin and bake at gas mark 7 for 55 minutes, electric fan oven 200c for 55 minutes. All ovens are different, so you will have to experiment a bit.

Add some walnuts and sun dried toms into the mix and you have meal in itself. The beauty of this bread is that it is easy to make, and requires no cooking skills or special equipment.

Don't know the carb levels on these muffins but it must be pretty low, I don't add honey or sweetener. Hey are quick to make and even the kids like them. Perfect for breakfast esp with a poached egg!

Paleo English muffins

1 Egg, beaten
1 Tbsp Milk of Choice( Unsweetened Almond Milk, Coconut Milk, or Organic Heavy Cream)
1 Tbsp Coconut Flour
1 Tbsp Melted grass Fed Butter or Coconut Oil
⅛ Tsp Baking Soda mixed with ¼ Tsp Apple Cider Vinegar ( this replaces baking powder)
â…› Tsp Vanilla Extract * optional, I omit if I?m making something savory like an egg sandwich
¼ Tsp Honey or ( 6 drops liquid Stevia)
1 Pinch Sea Salt * optional

Melt the butter or oil in a round, glass or ceramic ramekin.
In a separate small container or bowl mix baking soda and apple cider vinegar together ( it will be very fizzy and bubbly) Set aside.
Add all the rest of ingredients to the ramekin, and whisk or stir with a fork very briskly.
Add the baking soda- cider vinegar mixture to the ramekin, and stir in well.
Stir, scraping sides , until clump free.
Cook in Microwave for 1 minute and 30 Seconds, or can bake at 400 F for 12 to 15 minutes, until middle is firm.
Cool enough to handle, and cut in half sideways.
Toast in a buttered or oiled frying pan, until lightly browned on each side ( like a pancake)
Notes
Best when toasted in buttered or oiled fry pan. A Toaster oven might be okay, but not a regular Toaster. These are great with butter and honey, almond butter or sunflower seed butter, and egg muffin sandwich.

A rye/ seeded breed?

No bread is really low carb but you can buy lower carb bread in the supermarket. Burgen brand is pretty low as it's very highly seeded, or there's even lower carb at Ocado or the black rye bread at Lidl.

That's great weight loss! Well done. If you wanted to re-introduce some carbs, then home made bread is best as you know exactly what goes in it. I read recently that the stuff they put in shop bread to preserve its shelf life is not technically a food stuff! Get a bread machine, they're fab. Make something seedy with whole meal flour, it's still carbs, but will be low GI, so a little fills you up.
