Low-carb diets

Low carb on holiday?

I'm pretty new to low carb after loosing 26lb on Cambridge, now I'm doing low carb to maintain and finding it great and still loosing weight.
Off to Spain for 2 weeks in a few days but will be self catering so will mostly cook all meals, though I'm sure we will eat out too:

Can I have some ideas for meals and drinks please?
I'm thinking
Breakfast .... Cheese omelette, or scrambled eggs ( I love eggs of any kind)
Lunch a big green salad with some fried mushrooms ( I don't eat red meat except sausages.
Dinner? I am stuck here, I have Make a pasta bake without the pasta of course, all veg and lots of cheese.
I will make lasagne with leeks in place of pasta, but what else?
If I fancy desert I will have full fat cream with a few strawberries and some chopped almonds.
Any drinks apart from water will be vodka soda water and fresh lime. ( which I also love)
What about whist eating out? What are the best choices, without red meat?
Really want to keep this up whilst away, I am enjoying it. I also don't want to feel I'm missing out so any advice gratefully accepted.

Tapas! For eating out, tapas is one of the easiest for low carb because you can order individual little dishes that don't come with a side of carb, and have a meal where the low carb is in the nature of the meal itself rather than something that has been adjusted to be low carb. Eg: calamari (but watch the breadcrumbs), prawns, fish, chorizo, mushrooms, etc. anywhere with a tapas menu should make eating out dead easy. You just need to stay away from the paella, patatas bravas and (assuming it has potato) the Spanish omelette.

For self catering, why not look up some tapas recipes and see if you can find a few that you like the look of? You'll be in Spain with all the ingredients after all. And you can come home with an expanded low carb cooking repertoire.

Lots of fish and chicken....stir frys, hash - great for using up leftovers, salads, BBQ'd with slaws, quick curries made with curry paste and coconut milk and spring greens.
Spanish cheese is fantastic as as their hams - great for breakfast. Gazpacho - stay away from croutons but they often serve with egg and ham too.
I just try to stay off wheat while on holidays - it plays havoc with my body now - never used when I ate a conventional diet.

Yes I am looking forward to cooking with Spanish low carb food. Am really enjoying cooking ATM. Hope it lasts
