Low-carb diets

Sandwich alternatives?

I have just started today - hooray!

I have PCOS, I take a huge amount of metformin and I know that this way of eating will help alleviate syptoms and help me shift the last stone I need to get to 9.5 stone.

BUT, I can't get my head around the humble sandwich alternative! Please help!

I have three very young children, nearly 5 and under, and sometimes I need to eat on the hoof/in the car. I try to avoid starchy carbs and bread mostly, but sometimes need something to grab and go (and with the metformin, I sometimes just have that feeling of "I have to eat now or I'll die"!!!)

Any suggestions as to alternatives? Plain wrap? Ryvita? Rye bread? A lump of chicken just doesn't always cut it!

I know I'm always banging on about dried bean curd sheets on here (available from chinese supermarkets) but I use these sheets instead of filo pastry and make spanakopitas. If you have time every few days to do some batch cooking (i appreciate this may be out of the question with 3 little ones...) you could make some (I sometimes vary the filing eg I've done tuna, spring onion and feta), they're v handy for grabbing and going if you need something to eat with your hands. Eg I recently made some for a long train journey.

You could also take some sandwich filling in a pot and some crudités in another little pot.

The need to eat straight away usually goes with a low carb diet. I get low blood sugar, very very fast when eating "normally". Low carbing I don't, and I also rarely get hunger

Mini fritattas are great for eating on the go. I fry up a leek, some mushrooms and bacon lardons, mix with eggs and grated cheese and bake in silicon cupcake cases in a hot oven for about 10/15 mins (until risen and golden).

Cold frittata cut into squares is apparently good for one handed eating...but I haven't yet found a formula that keeps it firm enough, but worth experimenting. I've only just started the low carb way too. I do get hungry but not the faint I've got to eat right now feeling.

On days when I'm on the road a lot, I tote round a box of salad, everything shredded fairly small for ease with a fork. I just sit in car and eat it before setting off.

I have pressed pause on alcohol for a while (too ratty with children and get massive carb cravings the morning after!) so hopefully I won't crave bread as much.

Can you eat too many eggs? Its historically ingrained in me: 1 a day or was it 1 a week? Presently its looking like 2 or 3 daily (looks like DH might get the chickens he's been after all along!?)?

The eggs-cholesterol thing is complete bollocks, even the official advice has changed dramatically, previously it was something we were told to limit.

In fact the whole dietary cholesterol thing is bollocks ... As with fat, it is really over consumption of carbs/sugar that makes everything go horribly wrong.

For info, if you want to look into those topics, try - Marks daily apple, wheatbelly blog, theeatingacademy, paleo solution blog.... There are plenty of others too but all these have good science links (explained in plain language), and dishy fit bloggers on the whole (love what this woe does to people's skin!!!).

what about Oopsies - they are a bread roll type thing made from eggs and cream cheese. Can be filled with cheese/meat and used like a sandwich.
Very popular on some of the Atkins forums, but can be a bit tricky to make.

Lots of good ideas already. I just wanted to say the feeling of "I must eat now!" will go, if you can stick to low carb. I've been on Metformin for years (PCOS too), but certainly no more of that kind of hunger. Good luck! I used to have a lot of symptoms and no periods at all, but low carb and losing 4st have worked a treat. Also, eat all the eggs you like. :)
