@CointreauVersial I make a batch of chia pudding and I find it continues to thicken over the days... I also stick in whatever creamy thing is hanging about in the fridge - cream cheese, sour cream, creme fraiche, mascarapone. Then I add a bit of water (not milk) if it's looking a bit thick. I have a tub of blended seeds, blitzed nuts, toasted coconut, pumpkin seeds and have a sprinkle of that on it.

That's the simplest advice to follow without getting into details of different carb counts, although they are on the tabs at the bottom of the speadsheet. If you are wondering about a particular food item then google the manufacturer's website where you can find the nutritional information including carb counts. Of for fesdh items try the Sainsbury's website which has excellent information.
From the Sainsbury's site I could see that nectarines have 9g of carb per 100g (compared with about 4.4g for raspberries). Dates have a whopping 46g cab per 100g!!! That's even more than the pumpernickel bread which has 35g carb per 100g. Whilst all of those might be part of a healthy and varied diet, none of them are OK for low carb bootcamp.
