Summer '23 Low Carb Bootcamp - week 8 - our final week

Morning all.

Here's a link to the Spreadsheet of Fabulousness

(fingers crossed that I've posted the right link - no doubt @FinallyHere will correct if I haven't!)

Just one more week to go. Hopefully we're going to get some sunshine this week - Wednesday looks particularly promising - which makes salad meals much more tempting.

It may only be a week, but still time enough to shed another pesky pound or two!

Good luck Flowers

@BIWI @EvenlyDetermined it was defrosted frozen fish without the skin on. I have a weird sort of phobia about having fresh fish in my fridge for more than a day so I find frozen easier, also it's cheaper and I just chucked it onto my weekly shop.

I'll try a non stick pan with butter next time and then I'll add lemon and maybe pesto

@BuffyTheBuffetSlayer that must have been hard. Are you recovered or do you have ongoing impacts? What would help you most over the next few weeks - encouragement? menu ideas? just sitting alongside us?

We had a proper Sunday lunch, just dh and I. So I had coffee with cream at 11.30am, and will have something light later on.

Roast chicken and then things inspired by the many things left in the veg box (busy week meant that there is a lot lingering in the fridge and new box arrives on Tuesday). Had tomatoes roasted in olive oil and herbs, courgette fritters, crispy kale. And have also made mushroom, herb, truffle oil and cream cheese pate...

Ds is back home with his girlfriend: she had been convalescing after her op close to her mum.

I'm going to make myself eat tonight: will make us a white fish dish with a cream, mustard and cheese topping, finished with sliced tomato which is then grilled. Nice and easy - and ds' girlfriend does apparently now eat fish, even if ds doesn't like it tough shit

Dh has been surviving on pies, chicken nuggets and microwaved curries, so that I don't need to do anything.

Home and Ibiza was lovely, one of my favourite places and very chilled. Rather more alcohol than necessary, but food choices pretty good on the whole and allll the water as so hot......not looking forward to weighing tomorrow as I can feel how bloater I am but also know that it's easily reversed.
Food shop tomorrow - will be plenty of veg, and intending strict BC during the week going forward with possibly more relaxed at weekends. I'm not a fruit or sweet person so tbh strict BC isn't really onerous for us.

@prettybird your dh is a hero eating all of that. Well done him!

@TheOnlyMrsW welcome back
