Low-carb lunches

Does anyone have any ideas for good low-carb lunches? Preferably including some that can be taken to work - I seem to be stuck on omelettes at the moment Grin

Salad and protein basically
add roast Mediterranean veg (the pre chopped trays), or broccoli/beans/beetroot or slaw, left over stir fry etc to the green leaves for fibre
And then
Chicken and avo
Caesar
Cobb
Nicoise
Cold cuts (ham/beef etc with beetroot / slaw)

Mackerel (bbcfood have a great super green salad with mackerel)
Salmon
Goats cheese
Ploughman’s (with ham as well as cheese)

Can have a smaller salad and combine with bought veg soup

What facilities do you have at work? Do you have a kitchen? Do you have a microwave? Or nothing?!

If you have a microwave, it's easy! When I was working I often took leftovers from the previous night's dinner. Easy to take to work and put in the fridge till lunchtime.

In the summer, I'd make a plate of sliced vine tomatoes and a ball of mozzarella dressed with olive oil and either fresh basil or, if I didn't have any basil, a large spoonful of pesto. (We had a Sainsbury's Local just up the road from the office so it was easy to buy stuff when I needed it - but I could just as easily have taken those in from home - keeping the jar of pesto in the fridge).

I also used to cook salmon in the microwave - it's really easy. Just put your salmon fillet in a dish, squeeze the juice of a lemon and add some olive oil, cover with clingfilm and cook on high for just two minutes. I'd have that with salad and a dressing.

Hope that gives you an idea to start with!
