Week 7 Pre-Christmas Low Carb Bootcamp

So we come to our final fortnight.

From here you can decide what you want to do. If you like, you can move to Bootcamp Light - or if you feel you need to be super strict you can stay on/move back to full-on Bootcamp.

Here's the link to the Spreadsheet

I promised that I'd post another vegetarian recipe, so here's one of my favourites (which is on the vegetarian recipe thread), from Simon Hopkinson:

Grilled aubergines with olive oil, garlic, parsley and feta cheese

Serves 4

Ingredients:

4 long, thin-skinned purple aubergines (alternatively use the ordinary plump, pear-shaped variety available from most supermarkets)
1-2 garlic cloves, finely chopped
handful parsley leaves, finely chopped
5-6 tbsp extra virgin olive oil
a little sea salt and black pepper
150g/5oz feta cheese
lemons, for serving

Preparation method:

Preheat the grill to high.
Run a small, sharp knife round the top of the aubergine, 1cm/½in or so below the stalk and only just cutting through the skin; then make four evenly spaced, similarly shallow cuts, along the length of the aubergine right down to the end.
Grill the aubergines for about 20 minutes, turning every 5-7 minutes or so, until evenly cooked with charred skin, and until the aubergine feels soft, but not too collapsed within. In the case of the purple aubergines, the skin will also have turned a dull brown colour. Transfer to a large, oval, white plate and allow to cool for two minutes.
Peel away the aubergine skin in four long, narrow sheets using a small knife. Without cutting right through the stalk end, cut the aubergines in half lengthways and gently prise apart until you have two horizontal halves remaining attached at the top end
Mix the garlic and parsley with the olive oil until well combined and spoon the mixture over the aubergine. Season lightly with salt (not too much - the cheese is salty anyway) and pepper, and crumble the feta cheese over the top. If liked, trickle over more olive oil to finish.
Serve warm, or at room temperature with lemon squeezed over.

Although this is lovely, it is a bit faffy - so sometimes I just cut the aubergines in half, cut a deep criss cross in each aubergine half and then drizzle very generously with olive oil (as the aubergine soaks up the oil like a sponge), season well and then roast till soft.

In a small saucepan I also gently warm some finely chopped or crushed garlic in more olive oil, sometimes with chilli flakes, and when the aubergine is pretty much cooked through, I pour this flavoured oil over it and roast for another 10 minutes or so, with the Feta cheese crumbled on the top.

Had a lovely Greek style slow roasted lamb tonight with asparagus, celeriac and leeks.

Blatant place marking Wink

Rayna37 · 29/11/2021 06:04

Hit the top of my maintenance range on Saturday morning which somehow detonated the fuck-it button so not expecting a good weigh in when I brave the cold and get out of bed! Lots of power cuts affecting my weekend, but lots of good stuff too but ate so much crap. Obviously before Christmas I'd want to be at the bottom of this range not the top so need a final good push this fortnight.

I've had that bread from the previous thread quite a bit from Waitrose, has some from the freezer on Saturday.

Glenthebattleostrich · 29/11/2021 06:30

Morning, holding steady at 1lb off! Food wise, doing fine, but the call of the red wine was too much.

It is sssoooooo cold here was pretty much surviving on tea with cream as i ran out of herbal teas. Supermarket has delivered though so cutting down on the cream today. Having lots of lemon and ginger tea instead.

Aderyn21 · 29/11/2021 07:23

Good morning all. Am 1.5lb off this week, so I'm going to carry on doing what I'm doing since it seems to be working. Made the almond base/bacon and cheese tart last night, for this weeks lunches and sm going to continue not drinking any alcohol until Christmas.
Im 'cheating' a bit in that I am having diet tonic in my alcohol free gin every day and I do usually have a square or two of 85% chocolate, although I have decided to try and cut that out altogether now.
Feeling quite happy and positive and in control of my food. To all the people who organise and run bootcamp and provide such fab information, I can't thank you enough for this Flowers

pinknsparkly · 29/11/2021 07:26

I'm down a lb again this week. Haven't yet got back to my lowest weight of a few weeks ago but at least the gain last week is starting to coming off. This bootcamp has definitely demonstrated that I can gain easily but take a lot longer to get it back off again! Onwards and downwards!!

Glenthebattleostrich · 29/11/2021 07:40

@Aderyn21 how are you making the crust? I am going to have a go at making a low carb pizza at the weekend i think. DD is desperate for pizza night!

Aderyn21 · 29/11/2021 07:50

The crust is 225g ground almonds, 55g cubed butter, 1 egg white and half a teaspoon of salt, blended together and pressed into a large shallow oven proof dish. Prick holes in it with a fork and bake for 20 mins at 180 degrees.

Aderyn21 · 29/11/2021 07:51

Grease the dish first. Forgot to say

mrshoho · 29/11/2021 07:51

Lovely recipe there BIWI thank you! Down 1.4 and keeping on well. I'm a couple of weeks behind so will be sticking to what I've been doing as much as possible. Have 2 meals out at the weekend, one is a Christmas meal and the other to an Indian restaurant.

The Storm at the weekend inadvertently helped with my alcohol abstentions. We thought it would be fun to sit in the hot tub Saturday night (We're down south so didn't get the worst of it). Got it all set up and drinks in the holders when the curtains of the pergola came untied and swept them all into the tub luckily no glasses were broken. I quickly refilled and as we got in the exact same thing happened. I still have the rest of the bottle in the fridge as the moment was gone and had a hot water instead! Hot tub and curtains are now being packed away for Winter now. It's not as romantic as we thought it would be in freezing cold temps.

Jollyholibobs · 29/11/2021 07:52

Morning all and thanks for the lovely vegetarian recipe @BIWI. Well done on the losses everyone.

4lbs down for me this week and feeling astonished. I have been strict this week, including some longer fast periods and cut back dairy as well. Result. Motivated by trying on the baggy cords that I lived in last winter. The won’t do up and I was panicking that I might have to cut them off me.

Travelling for work again today and had a rushed early start so Lunch will be M&S pickings.
D miso broth with pak choi, mushrooms prawns and a poached egg.

Hope everyone is surviving the weather. Flowers to those struggling with power cuts etc.

Aderyn21 · 29/11/2021 07:52

Bowl put a really good recipe on one of the earlier threads. I adapted it a bit because I had the wrong cheese but it's become a staple for me because it lasts ages and is very filling

Aderyn21 · 29/11/2021 07:52

Bowl?? Biwi

KeyLimePies · 29/11/2021 07:54

Morning everyone, hope you’re all keeping warm and toasty Smile. Thanks for the new thread @BIWI and the SH recipe looks good, I think I’ll give it a try (but just halving the aubergine as I got a bit lost with his method of prepping it!)

I’m thrilled to announce a 3lb loss this week. I don’t know why I seem to have a weight of point.2 of something most Mondays, but anyhow, down from 161.2 to 158.2 this week. I think it has taken my body a little while to get into full ketosis, but I seem to be there now. As mentioned before, my constant hunger has gone and I tend to eat at around 10am (usually eggs) then again at 4pm and if I’m peckish in between I have some Greek yogurt, a creamy coffee or some olives.

This WOE has shown me quite clearly how I used to eat out of boredom or just because the 12 pack of wotsits was there (4 packs of wotsits in quick succession is not satiating, a dollop of rich creamy yogurt is)

A big thank you to everyone else on this journey (and especially you ‘old timers’) for the chat, wisdom and encouragement Flowers

BelladiMamma · 29/11/2021 08:12

@BIWI that looks like a great recipe, I might treat myself later ♥️

Moanranger · 29/11/2021 08:23

Good morning all & well done on losses. I am down another pound to 81.4kg this morning. This past week I added in the SLC products - 1-2 a day, no more, & had about 20-25g mixed nuts a few times. Also experimented with an almond milk-based hot chocolate. Pleased to note they did not stop weight loss.
This week I have two eating out challenges, tomorrow a lunch with friends at an Italian, but I will probably have aubergine parmigiana. Thursday birthday dinner with DD at Cote, but their menu is good for LC ( they have celeriac “steak” on their veggie menu!).
So far 8.5 weight loss. Ten pounds by Xmas is certainly achievable & also motivating to stay on track thru the season of many temptations!

Dellabob123 · 29/11/2021 08:43

Morning all,
Some good losses this week. Well done.

I’ve maintained to again at my lowest point, and still find it easy to keep to strict LC pretty much.
Went out yesterday and made a veg frittata to have as a picnic, was great and yummy and filling in such a cold day. It was very transportable so will probably do that again when out and about.

I’m on my second coffee with cream, will have water and some egg type breakfast later.

Thanks for sticking with us @BIWI Smile

H1Drangea · 29/11/2021 08:50

Stayed the same , bit cross with myself , and will do better this week
Back to strict Bootcamp
B scrambled eggs
L courgette soup
D pork goulash meatballs ( I’m making it up as I go along )
Have a huge stack of ironing to do , which will at least warm me up !

KeyLimePies · 29/11/2021 10:21

@BIWI & @ouchmyfeet - sorry it looks like I've managed to delete bits of the spreadsheet (only on my bit) so after this weeks weight input everything else is blank, so not showing weekly loss, etc. Not sure what's happened.

BIWI · 29/11/2021 10:34

Uh oh! Hopefully @ouchmyfeet will be able to sort that for you Smile

MotherBuckets · 29/11/2021 11:00

Morning all Smile some brilliant losses going on, it's so motivating isn't it because this just works. I'll add to the pile of discarded flesh with 2lb of lard gone, making a whole stone so far, and I can (just) zip up my winter coat again, just in time!

Managed not to eat any of the vast amount of cakes / crisps / pizza that have been around for DDs birthday weekend and don't feel cheated one bit. It's a revelation!

StuntNun · 29/11/2021 11:04

@Aderyn21

Just my two cents but I mix Fevertree Naturally Light tonic water rather than diet tonic water with my alcohol-free gin (Ceder's Classic is my fave.) In my opinion, between sugar and artificial sweeteners then sugar is the lesser of the two evils. Also Fevertree is sweetened with fructose rather than sucrose so there is no glucose in it to raise insulin levels. Of course, fructose has its own issues because it is linked to the development of metabolic syndrome. At the end of the day, both light and diet tonic waters are not healthy choices but you'll only prise my G&T out of my cold, dead hands! so it's very much a matter of personal choice but I think we should all be aware of these issues. If you're consuming artificial sweeteners in other foods then diet tonic is the best choice. If your goal is to eat as clean as possible then a fructose-sweetened light tonic might be a better option - although at 7.6 grams carbohydrate per can you wouldn't want to have too many of them.
TrueGrit54 · 29/11/2021 11:52

MotherBuckets well done losing a stone! Good week for me, lost 2.5 lbs (almost 3 lbs dammit), that’s 8.5 lbs so far. It’s a bit slow but it’s working. I had a heavy period for 4 days last week and was very tired but feeling much better now. Sticking to it pretty easily. I will keep going with fairly strict (might have one meal with lentils, one meal with potatoes for example). I haven’t done C25K or any exercise even walking. Need to do something about this but I am lazy. Started watching the latest series of Professional Masterchef and seriously impressed by how trim Greg Wallace looks. I know there is a very funny thread about Masterchef that loathe Greg but he looks so much healthier.

Not hungry so far today, may skip lunch, dinner is left over roast chicken stirfry with lots of chilli, ginger and veg.

Wildheartsease · 29/11/2021 12:35

Feeling lighter - and am fitting into clothes I could only squeeze into before bootcamp.

No scales still, so I'm not filling in the spreadsheet but I'm sticking to the WOE.

Obviously, this wasn't planned but I quite like this way of measuring. I'm eating my 'real life food and can see the effect on my 'real life clothing'.

Aderyn21 · 29/11/2021 13:22

StuntNun I do have some fevertree little cans and I do use them too. I'm not really having much artificial sweetener, but I do love a fake g&t. I can't say my diet is totally perfect but it's so much better than it used to be - no Diet Coke, no alcohol, no 3 bars of chocolate every day, and much more veg and eggs and meat.
