I've also posted in low carb diets but figure here is more trafficky: I hope that's ok.

Please hit me with your quick low carb recipes. I'm really struggling coming in from work and finding time to cook from scratch low carb family friendly meals.

Me DH and 2 kids 2yo and 5yo. No fussy eaters, allergies or intolerances.

Not very exciting but omelette is my low carb fast food. My son loves them as well which is great!

Exactly what I need too!

On the recipes threads there's a mild curry one which us super quick- curry paste, meat/veg and double cream. v tasty and v quick.

I also do burger with mushroom and halloumi instead of bun.

Batch cook bolognaise with onion celery 20% fat mince and eat with courgetti or Sains frozen chargrilled med veg..

Do your family eat carbs?

Last night we had spag Bol, I just had the sauce with salad.

Tonight we are having burgers, no bun for me, plenty of salad.

Tomorrow chicken thighs with a blue cheese dip and broccoli.

Traybakes with lots of veg and either chicken or decent sausages can be quick & easy.

Easiest and quickest, other than prepping and batch cooking in advance, tends to be meat or fish served with two or three veg, all of the kind to cook within 20 minutes e.g.

-Salmon (baked in foil in the oven) alongside a tray of frozen green beans, with maybe something on the hob like sauteed kale or just normal broccoli

  • Cod or similar white fish (baked in foil in the oven) alongside a tray of red onions, peppers and courgettes roasting in oil
  • grilled pork or lamb chops/steaks, or pork belly strips, with any lower carb veg
  • sausages (check carb content) either with roasted veg or green veg and cauli mash

For a lazy option I get a ready meal (indian or thai usually) from M and S with less than 3g carbs/100g (doesn't have to be M and S but they do the nicest ones) and have half, pimping it up with some protein (fish, chicken, prawns) to bulk it out with meat. That makes two meals at around 6-8 g carbs. I also add green veg or cauli rice to bulk it out more.
