Kummer there are two answers to your question about veg - the first is, that it depends which plan you're following!
On Bootcamp it's one of the key things that I always say - that you should be getting the majority of your carbs from veg and salad. I know nothing about the Scandinavian diet.
However, the second answer is that it depends.
One of the critical things about low carbing is that there is no, one set amount of carbs that people should eat daily, because we all have different tolerance levels. Some people can eat well over 20g a day without gaining weight, others have to stick firmly to 20g or even go lower.
Unfortunately no-one can tell you how many carbs you need - you'll need to figure it out for yourself and the only way you can do this is by experimenting.
Atkins is a really good approach for this, because you start first with induction, which is 20g carbs per day; on that level you should lose weight. After that you gradually increase your cabs by 5g a day until weight loss stops, or you start to gain weight.
And in terms of fat, there is no need to limit it. What you've listed sounds fine. To be honest, you'll find that you should naturally limit it, as it's hard to eat a lot of fat (certainly in one go!), and as it's also very satiating, you won't be so hungry.
