Bringiton Rose Elliott has created a vegetarian low carb diet, and has written a really good recipe book to go with it.

Also, have a look at the Bootcamp recipe thread (stickied at the top of the Low Carb Bootcamp topic) - there are lots of lovely veggie recipes on there.

Many thanks. I will continue researching. I usually eat frozen processed crap and have no idea how to cook. This is going to be huge for me. Will I basically be eating vegetables and salad??

What happens after week 2?

Bringiton I also can recommend Rose Elliott's vegetarian low carb book: it's great.

Yesterday I made a lovely aubergine and halloumi bake with coriander pesto. Vegetarian, low carb and delicious.

IME what happens mostly on a low carb diet is that you start cooking more and generally eating more healthily. The biggest difference I've seen (I'm now 1.5 month without sugar and processed carbs / and 5-6 days on strict low carb) is that I'm not hungry and have zero sugar cravings: I also find that I get through my afternoons at work completely alert and thus productive. Not sleepy and sluggish, all that disappeared.

Really really worth trying a low carb diet. Also: read Gary Taubes' book 'why we get fat' which is hugely inspiring.

Have you read Bootcamp rules? If not, find the latest Bootcamp thread (I think it's called Final week...), and click on the link to the spreadsheet. On the tabs at the bottom you'll see a link to the rules and somewhere there, there should also be rules for vegetarians (as you're allowed to eat things like nuts and seeds in the first couple of weeks which others aren't).

After the first two weeks the strictness is relaxed slightly.

I'll look up the rules too. Oh I didn't realise there were versions of low carb where nuts are not allowed at the beginning?

In Bootcamp, nuts and seeds aren't allowed for the first two weeks.

This may be different from other plans - can't remember!

Yes in pig to twig which I'm (successfully / happily) doing now, they're allowed but one needs to be careful I think. Greek yoghurt and milk are not allowed at all (differently to boot camp).

What's the reasoning behind not allowing them, do you know?

Because they're actually quite carby unless you only eat a very small amount of them.

Interesting BIWI. I would never had thought of nuts as carby! I always saw them as pure protein. I have limited them actually as I found I was eating too many of them.

Ah. You really, really, really need to start reading the backs of packets!

Nuts can be very carby. Almonds and macadamias are the lowest - but things like peanuts are very high. That said, as a snack, in extremis, they're always a better option than crisps!

The additional problem with nuts is that they are so moreish - especially roasted and salted - so it's very easy to consume lots of carbs, even if you choose lower carb ones.

You're absolutely right 'a handful of nuts' always ends up being a few handfuls (or more)!

I'd really like to do the next boot camp. I've been cutting out carbs and sugar this week. No bread, pasta, rice or potatoes. Lots of salad, veg, meat, eggs and yoghurt.
Yesterday was a disaster. A friend turned up with a box of magnum ice creams. I had 2. Tonight i'm going to a friends for dinner, she's making lasagne and we'll be having wine.

But, my head feels in a good place with the whole thing and i think the boot camp would be a great help.

I've gained weight since i stopped smoking and have been on Pregabalin which has increased my appetite. I can see the difference to my appetite with filling up on protein and not eating any bread so am hopeful i can catch this and reverse the weight gain now.
