Low carb food to take camping

Have a while yet to think about this, but have a festival planned for June. Most of the camping food people think of is all very high carb stuff like noodles. Last year i survived mainly on stall-bought food, but as dh is coming, he can cook stuff for us this year Grin

So, does anyone have any suggestions of stuff that is easy to store and easy to cook...? Its five days, so we'll need a lot of meals...

will you have a BBQ or a camp stove? Will you be able to get to a shop in that time to re-stock or taking everything in a cooler?

Actually camping sounds ideal for lc if I remember from childhood camping trips: fry up for brekkie, pub lunch then campfire sausages for tea.

If you have a BBQ you could do boneless chicken thighs, homemade burgers, thin beef steaks, fish in foil, veg in foil such as broccoli, carrots, courgettes

Perhaps boil some eggs to take with you and get cheese sticks etc

We have a camper van, so I can pretty much cook as usual between the hob and the BBQ, although no fridge, so shop little and often. Our camping trips are usually planned with a Good Pub Guide in one hand, so it's keeping off the beer that is my low-carb challenge.

But festivals? I start drinking cider at 8 in the morning, and eat whatever delicious carby goodness is around to soak up the booze so I can keep going until 3am ish...

Yes! We did stuff like chilli/simple curry/various stews and froze them in blocks and put them in the cool boxes so they acted like ice packs. We froze bacon and lc sausages too. We also took pickled cornichons which were really low carb, and lots of vacuum packed mackerel (which sat in the cool boxes. Tons of eggs, mayonnaise and salad items, and you could also do meatballs and freeze them. Veg stay fresh enough anyway, and I think you can freeze cream. Freeze berries and take Greek yoghurt, cos that stays nice for ages, as well as pork scratchings. For the first day or so, we had deli meats, salamis, cottage cheese, other cheeses, which lasted a few days, and we took bottled water for ease of supply....

Frozen mince is great as well for nearer the end of the camp, as when it's defrosted you are fine to cook it in any condition ( beef mince) and you can do lovely burgers and salad with feta.

If it was just the weekend, i'd have it 'off', but i'm doing the whole week, then off on my proper summer holiday a week later. So must stay on track!! Grin
