I just made courgette fritters...

And they were disgusting! Fell apart in the pan, much too wet, ate a bit but couldn't face the rest.

Cat quite enjoyed them tho...Smile

Anyone had more success than me?

i think their water content is too high- you could grate, salt, then put in a colander to drain first before forming into patties. apologies if you tried that- even this might not work!

squashes work well, as do sweet potatoes but both are carby.

Thanks, I did salt and drain them but obviously not enough.

Low carb cooking is so often a case or trial and error, have chucked away a few things before now.

Mashed celeriac's not bad tho and fat bombs. Yummy!

Did you grate the fluffy centre of the courgette? They are often better if you just chuck that bit. I tend to stick with courgetti or cut them into slices and roast them with some parmesan on top.

Not keen on celeriac mashed but I love the chips with garlic mayo or cream cheese to dip. Smile

Use a spoon to scoop out the seedy middle bit, then grate the courgette into a clean muslin and wring out the excess liquid.

I think the trick is definitely in the wringing out. Squeeze as much moisture out as you possibly can, then carry on for a bit longer Grin

I've made them twice - first time they stuck to the pan so we ended up with a pile of mush, which looked awful but tasted good. Next time I used the flat bit of my griddle and they were a lot better.

Worth having another go, I reckon. I think they'd make a lovely breakfast with a poached egg or two on top.

Mine have about a tablespoon of flour in them, I don't know how that works with low carbing? Carrot fritters work well too & aren't as wet.

Can I recommend courgette "pasta"
If you don't have a spiral thingie then use a box grater on it's side
Fry off for a few mins in some oil, add whatever you want (I used chopped ham, Parmesan shavings and a big spoon of creme fraiche) and serve Smile
