Pork Belly Slices - recipe anyone?

I've bought some pork belly slices but all the recipes online involve BBQ sauce or honey.

Does any one know of any simple low carb recipes?

No one seems to be jumping in here do they? I tend to buy belly pork in a slab and slow roast it on a bed of veg so that I get crackling but it doesn't go hard on the bottom. Last time I did strips I put it into a roasting bag with some chopped shallot and sage as I've found that the strips don't go as tender. It came out fine. I still prefer the belly joint but it was tender and moist and the fat went crispy in the bag.

Love love pork belly. what I do is sprinkle on some salt, fennel seeds and some chilli flakes and bung in low oven for hours and hours. This combo originated with Jamie Oliver I think. Fennel seeds go really well with pork and are trad Italian.

Other things that work are Chinese flavours, like star anise and soy sauce. you can leave out the honey etc. Eat with wilted Chinese green veg or my favourite spring greens with a bit of toasted sesame oil on them and possibly sesame seeds sprinkled on top.

Like Miffy says, the secret is to cook it sloooowly and I agree, the bigger a bit you get, the less likely it is to be dry.

We just cook it the way you did it and then chop it up for snacks or to be added to lunch salad.

I keep it simple and cook belly pork on low for approx 50 mins which just salt and pepper rubbed on. I serve with veg and it's delicious.m

I have got another recipe which the children love but it's not great for low carbing, although you could make substitutions.

Lay the slices of belly pork in a lasagne dish, place some sliced potatoes on top and then some sliced apples. Cover half way up the dish with stock ( veg or chicken works well) and then add some grated cheese and breadcrumbs and cook on a medium heat for about an hour. It's v tasty but like I said not great for low carbing.m

My mum always made us a nice casserole with pork belly; you'd have to trim any tougher rind off but basically:

Chop pork into casserole size chucks and fry off with onion
Add carrot slices and maybe pepper; whatever you have kicking about really
Add tinned tomatoes
Add tin baked beans
Add mixed herbs & seasoning to taste

It's just yummy; dunno why but all the things work.

I use this low carb barbecue sauce recipe and put them in the slow cooker with some barbecue sauce spread on them for about five hours. Sometime they're nice straight out of the slow cooker but if they look a bit pale then I put them under the grill for a couple of minutes to finish them off. Pork belly really needs to be cooked at a low temperature for ages or it ends up tough so the slow cooker is ideal for strips. If you can get one big piece of pork belly then it works best in the oven on a low temperature for ages with a blast of heat at the start and the end to make the crackling. You don't need much seasoning, just salt and pepper rubbed into the skin and a herb such as fennel or sage sprinkled over.

Sounds good like that. Will have to dig out the slow cooker and try that with the strips. Its hard to get a decent sized lump of belly so I usually buy a couple wholesale and bone them out myself. With being flat they stack nicely in the freezer in meal sized lumps. Always a popular Sunday meal.
