Asparagus Frittata (serves 2)

250g/9oz asparagus, trimmed and cut into 5cm/2in pieces
4 eggs
4 tablespoons freshly grated Parmesan or Pecorino cheese
225g/8oz spring onions, finely chopped
2 tablespoons olive oil

  • Cook asparagus in boiling water until tender (7-10 minutes)
  • Whisk the eggs and add the cheese and the spring onions
  • Pre-heat the grill
  • Heat the oil in a large frying pan that can go under the grill
  • Put in the asparagus; stir-fry for a minute, then pour in the eaten eggs, moving the asparagus around gently to make sure the egg mixture gets right through, and that the grated cheese is well distributed
  • Let the frittata cook over a moderate heat for a few minutes until the underside is cooked and lightly browned, then put the pan under a hot grill for a minute or two until the top is set and golden brown

5.5g carbs per serving

Grateful I started Boot Camp early so that I'm on Boot Camp Lite for Burns Night, so I won't feel too guilty having the haggis and neeps (no tatties Wink) and cranachan. And wine. Wine

Have to make an exception for the haggis! Wine love it.
I make low carb cranachan ( once on BC lite) by replacing the oatmeal with toasted almonds. Instead of honey I dissolve a bit of stevia in good whisky to sweeten. It's really really good.

ARgh! You've reminded me it's Burns Night soon (I would have remembered) and I'll have to either break bootcamp or not have it! We have lovely haggis in the freezer (best option here, it's really hard to get hold of, and 9/10 it's made of PIG ffs, but I found a genuine Scottish bloke making proper haggis with not a shade of pig anywhere in it, so we buy large and freeze) and neeps is my favourite anyway, I'll just have to pass on the tatties. No whisky though - can't have the stuff any more :( (gluten grain, buggers me up).

thumb noooooo I'll just have to drink the whisky for you! Coincidentally my hubby and I met on burns night... Not at a burns supper though...nothing so classy! Dodgy nightclub snog, although I'm sure I had battered haggis and chips on the way home from the pub! We got married 7 years later on the 24th. Will have to book a meal out to celebrate. Thank god for this thread or i'dve forgotten all about it!!

Have burns night I say, it's only a bit of oatmeal (she ducks in case there's a big stick around) haggis is the BEST!

Variation of BIWI's Slow-Cooked Coconut Ginger Pork

*Slow-Cooked Coconut Ginger Pork Belly"

Ingredients:

2 pound pork belly cut into big cubes
1/2 teaspoon ground cumin
1/2 teaspoon of coriander
1/4 teaspoon salt
1/4 teaspoon black pepper
1-inch piece of ginger, peeled and thinly sliced
4 cloves of garlic, finely chopped
1 big red onion, peeled and diced
1/2 can of coconut milk

Instructions:

Put all ingredients in the pot. Cover. Cook for 8 hours.

I took meat out and added some chopped shallots and 2 sliced courgette.
Cooked on the stove for another 15-20 min adding some water as it started drying.

It was delicious!

Creamy chicken and avocado zoodles. Last night we sub the basil for corriander and it was really good to.

Sage might be nice also

Granola/muesli

50g Flax seed

15g ground flax 

50g pine nuts

50g almond flakes

25g unsweetened coconut (I used the strips for texture)

25g Chopped peacans

25g Chopped brazil nuts

25g Chopped Walnuts (I used skin removed)

2tsp cinnamon

6 drops liquid stevia (or sweetner of choice)
1 egg white

60g melted butter

 Or coconut oil

Mix all nuts/seeds together, mix in stevia, butter / oil and egg white and spread out on greaseproof paper or silicon. 
Bake for 10 minutes, using a metal spoon turn over (gently you want to keep some pieces together).

Put back in the oven for another 10 minutes or until golden brown and smelling delicious!. Leave to cool.

Wonderful with cream, natural yoghurt, rhubarb or just plain as a snack. 
All the nuts/ seeds add up to around 12g carbs for the whole recipe. The stevia drops I have (Amazon) are only trace each, as you only have 1 per serving I have not counted them.

Fathead garlic pizza bread - 4 servings

Base:
200g mature / hard mozzerella. (Not the soft stuff in milky liquid!) or Edam grated.
80g cream cheese
1 egg
80g ground almonds
Topping:
2 crushed garlic cloves
50g butter
1 tbsp olive oil
Sprinkling oregano (dried or fresh)
1 tbsp grated hard cheese such as grana padano or Parmesan
50g mature / hard mozzerella

In a microwave proof bowl put the mozzerella and cream cheese for the base. Microwave until melted and stringy. Beat in the ground almonds and egg. Wet hands. Push out on a tray lined with buttered grease proof or silicon. Best use one with sides like a Swiss roll tin, helps retain the garlic butter.

Dock with a fork and bake for 10 mins. Flip.

Microwave the butter, olive oil and garlic until butter melted.

Pour over the bread. Sprinkle over the mozzerella, Parmesan and oregano. Bake for a further 10 minutes.

Cheese crisps - have done some pics as some seemed to be having trouble.

Can be done with any hard cheese, I used Gouda slices here, 2 slices make 6 crackers. You can use whatever you have: baby bel, cheddar, Edam etc. I would use 2 babybel to make 6 crackers.

Slice and place on a greased plate or use silicon. Pound land have 6 silicon cupcake cases or a 9inch Victoria sponge case so you could make one big one and break up into shards.

Microwave on high for approx 2 mins. It will melt, the fat will separate and foam. Keep going, be brave, eventually maybe move down to 10 second bursts. It will become hard to touch when ready.

Use to scoop up salsa, guacamole, cheese dip, top with butter, Stilton, pate, marmite, nut butter...Grin

Really quick cheese sauce for veggies.

Approx tbsp butter in microwave bowl, tbsp full fat cream cheese (avoid Philly as it has sugar in it), then on top grate some strong cheddar add any seasoning or mustard if you wish. Nuke for one minute, give a good stir and pour over veg.

Great when you've already used your cream allowance.

Pork Scratchings

Remove the skin and layer of fat from a joint of pork and pat away any moisture with kitchen roll.

Score lines in skin with v sharp knife and coat in two tsps or thereabouts of white wine vinegar.

Sprinkle liberally with salt and leave in fridge to dry out, preferably overnight or if not, for at least a few hours.

Wipe dry again then cut into scratching sized strips, before adding seasoning of your choice.

Lay strips on a rack over a baking tray then put in the oven at 140c for an hour. The tray will fill with lots of oil, so be v careful when removing from the oven.

Turn oven up to 200c for about 20 mins, then remove and toss with any seasoning you fancy (I just used salt and pepper) before scoffing all to yourself in the kitchen serving.

225g cream cheese
1/8 cup sweetener (or equivalent stevia drops)
1 eggs
1/2 tsp. vanilla
Soften cream cheese about 40 seconds in microwave.
Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake for approx 20 mins @ 200°.

Leave out the sugar, fish sauce can be a bit carby so can be changed for tamari.

Crackers

8oz (225g) ground almonds
1/4 tsp salt
1 tsp rosemary (or any other herb you fancy)
1 egg, beaten
2 tbsp olive oil

Mix everything in a bowl - best using your hands.
Flatten the dough between 2 sheets of greaseproof paper, use a rolling pin to get the dough as thin as possible.
Remove the top sheet of greaseproof paper and place the bottom one (with the dough) on a baking tray. Use a knife or pizza wheel to cut cracker shapes.
Bake at 175C for 10-12 minutes.

PS. The crackers recipe above has a total of 15g carbs and I usually get around 20 crackers out of the dough.

LC chocolate cake

150g nasty 85% chocolate
150g butter
6 eggs
1-2 cups of granular artificial sweetener
vanilla extract
100g ground almonds

Melt butter and chocolate together (I did this in a bowl over a pan of water as I don't possess a microwave)
whisk eggs together with sweetener and vanilla
fold eggy mixture into chocolatey mixture
fold almonds into eggy/ chocolatey mixture
bake in a buttered springform tin (about 25cm) at 180 degrees (or 160 if a fan oven) for 25-30 minutes

Swede & Curry Soup
Serves 6 – 8
(adapted from a Gordon Ramsay recipe)
Tbsp butter
2 shallots or leeks
3 celery sticks finely chopped
2 medium or one large neep/swede peeled & chopped into small pieces
2 Pints ish liquid (3/4 stock chicken or veg + good slug cream (cream is optional))Shock
6 cardamom pods & 1 tbsp curry powder

Fry the shallot and celery in butter until soft, add salt/pepper/curry & the crushed cardamoms.
Cook for another 5 minutes or so until the shallots are translucent.
Add the chopped neep covering the pan to allow the neep to cook for (20-25 mins) Add a splash of water if it starts to stick.
Finally, add the stock – enough to cover the swede. Simmer for another 20 mins (or until all soft and yummy) then add cream before blending until it’s smooth.
