I'm faced with a couple of days packed lunches and thought a thread of ideas would also be useful long term. Obviously leftovers, especially when it's possible to reheat is great, but especially when that's not an option or you are out and about, what are your recommended portable recipes?
I'll start with frittata if you've never made one: you need a small non stick pan.
2-3 eggs
Tbsp Greek yoghurt
1/2 shallot very finely chopped
Vegetables - I like courgette and a sprinkle of peas in this but they are carby so can be subbed - spinach, asparagus, peppers all work well. I don't see why mushrooms wouldn't work with the right cheese (see below) You want 2-3 of handfuls of chopped veggies depending on how they will cook down, the size of the pan, how many eggs used...
Pancetta/bacon (can omit for veggie)
Cheese - Feta is best I think, and some parmesan for the top, but anything will work including big standard supermarket cheddar.
Fry the pancetta until browning and crispy. If not using, start with a little butter and oil (to avoid burning) or coconut oil.
Add shallot and fry until soft
Add other veggies - those that need cooking longest first - and fry until just cooked
Beat eggs and yoghurt together with salt and pepper and perhaps some dried herbs or nutmeg (works well with eggs) - pour into the pan and gently stir with bacon and veg to combine.
Now add crumbled feta or grated cheese and gently combine again - rearrange veg/cheese/bacon so evenly distributed
Turn down the heat so everything cooks slowly and pre heat the grill
When the top is just set and/or the underside is brown (lift with a spatula) place the pan under the grill (optionally add some grated parmesan first) until browned.
Upturn onto a plate or board by placing on top of the pan and inverting. Leave to rest/cool for a bit before cutting into 1/4s or 1/6s
Works warm, at room temp, cold or reheated on its own or with salad or coleslaw. Very portable and can be eaten on the go.
