Hi

I am a LP to one dc, I'm struggling with planning meals that will suit both of us. I don't like cooking mainly because I'm not that confident I do it well!! I don't get home until 6-7pm most evenings and I've fallen into the habit of making something for DD that she likes then just making something quick for myself like beans on toast. Just looking for suggestions of things I could do that we could both eat together and that's fairly easy to do.

Filled pasta and pesto? Takes about 5 mins?

Do you have a slow cooker? Could you put something in the night before so it's ready when you get home?

Omelette and salad?
You can vary the fillings in the omelette - mushroom, cheese, tomatoes, truffles (joke) Grin

I know there are loads of slow cooker fans on MN - I've had very little success with it and everything tastes quite blah IMO. It is quite good for spag bol though. But I wouldn't buy one again.

Thanks for replying. No I don't have a slow cooker DD is quite fussy which makes it a bit difficult she doesn't like 'sauces' but does like gravy. I just want to be able to sit down together and eat instead of DD eating then me when she's in bed.

Give us a list of things your DD will happily eat and then it will be easier to suggest quick & easy meals.

Roast dinner is her favourite
Eggs (any way)
Cheesy mash
Fish fingers/any breaded fish
Stew
She likes any meat just not sausages
She likes most veg
She likes pasta but plain!

Risottos, pasta and a variety of sauces. I bulk cook things like shepherds pie and freeze so I get out in the morning ready to cook in evening.

I make a quick "roast dinner" for my 2 DD and I (they're 3 and 1)....

Aunt bessies roasties
Chicken fillets just baked in foil
Carrots and peas (I buy the carrot batons pre prepared)
Aunt bessies yorkshires
Gravy......
Takes bout half an hour....potatoes and chicken in one baking tin...then chuck yorksire puds in at last minute
You can chuck potatoes and chicken in as soon as u get in, then get yourselfs settled and then go back to it. I find it a quick 'proper dinner' after work

Also- make a lasagne at weekend and heat it up
Jacket spuds, beans and cheese
Meatballs and rice....really quick
They love it.

And yes to the slow cooker idea....my friend has one and I'm defo going to invest for this winter. Lovely stews and casseroles....really really easy- basically ready when you walk through the door!!! :)

Definitely get a slow cooker if she likes stews. So easy - you just sling it all in the cooker in the morning before you dash out the door. Come back home and you have delicious stew.

You can also do jacket potatoes in the slow cooker - just wrap them in foil and bung them in and they will be ready when you get home.
