What's the name of the document I need which states percentages of ownership of a property? A trustee something?

And you also need if a property is already held as "joint tenants" to sever the joint tenancy and hold it as tenants in common instead. Also remember if you are married then it doesn't matter who has what share - it is all up for sharing if you divorce.

Xenia I bought my house outright no mortgage before we were married. Dh is more than happy to get a deed of trust stating it's my property.

Sounds like what you need is a post-nuptial settlement. A deed of trust will have little effect on divorce.

Yes, as C says. As you are married rather than just living together even if everything were 100% in your name your husband may on a divorce be awarded some of your assets. You could try a post nup agreement and as long as it is fair to both sides and both of you use solicitors (separate ones) it may have a chance of being binding later.
