What is the legal definition of disability

and which bit(s) of which act(s) could I quote to back that up, please.

It depends very much on the context.

For instance, if you're wishing to know whether or not a condition could be classed as a disability under the scope of the Equality Act, then unless it's a very specific illness (HIV, Cancer or MS) then it's based on an interpretative definition.

"You’re disabled under the Equality Act 2010 if you have a physical or mental impairment that has a ‘substantial’ and ‘long-term’ negative effect on your ability to do normal daily activities."

There are exceptions to this however, in the cases of substance addiction etc.
