Here's a challenge for you: GF NF CF Passover cake

I want to try and make a Passover cake that everyone at my Seder table can eat. It cannot have gluten, nuts, chocolate or potatoes. I don't think tapioca is suitable, either.

My first thought was a fatless sponge made with cornflour instead of wheat flour. Fairly straightforward to make, would probably be quite dry to eat. The people with dietary restrictions would probably not be able to add liqueurs or syrups to their servings.

I can't find a better idea or suitable recipe online.

Any suggestions how I could improve a simple sponge, or of something else that fits my bonkers requirements?

Also, I don’t think you can have cornflour at pesach.

There are so many health issues in my family that we have decided not to worry about kitniyot. People on severely restricted diets still need to eat and enjoy the festival.

Someone else has nabbed pavlova, because I have a reputation as a decent baker. (Eeek.) We are trying to make the Seder as accessible as possible to everyone. It would be lovely if everyone could eat everything.

I made these last year to cater for various allergies. You could sub sultanas or another dried fruit for the choc chips and cornflour for the potato starch if you eat kitniyot. I used coconut oil which gave them a nice flavour. Or how about a strawberry mousse?

Some sort of rice pudding if you eat rice? Or homemade macaroons? Could do some dipped in chocolate and some without?

You'd need to find a sub for the graham crackers as it's an American recipe but you could do crushed gluten-free biscuits?

I make a Pesach cheesecake and for the graham cracker crust, I use ground up Passover mandelbrot without nuts because we have a nut-free person at our table. I sometimes combine them with kichel--do you guys have those? I grind all that in the food processor with sugar and butter or Passover butter and press in my spring form pan and bake before filling with the cream cheese mix.

This looks good. I'm going to make a small one using buckwheat flour as a trial run tonight. Will probably skip the juice and alcohol s as I don't have any available.

In the oven, looking good (despite my attempts at self-sabotage: forgot to halve the sugar, and put in 2tsp of Palwin for the juice and wine, instead of 2tbsp).

No potatoes???? Rocky road (a la Naomi nachman). Has Rich’s whip, melted choc chips and marshmallows and chopped nuts but you could swap the nuts for raisins

I made mayo and in my rush used a tbsp sugar instead of a tsp 😱 salvaged it by making more , but now need to make more again! Oh and made a sponge flop cake by accidentally adding all my ingredients to my nicely separated egg whites instead of yolks bc I was distracted and chatting 🤣 apparently the salvage attempt is edible- I disagree 🤣
