Any good chicken schnitzel recipes anyone ?

I love it but have never made it before and want to make some for my Israeli friend. Does anyone have any good recipes ? Is frying essential for an authentic, crispy result and which breadcrumbs are best? I’ve bought Sainsbury golden ones? I’ve no idea if there is any way of making them that is more Israeli than European? . I’ve only had them when I’ve visited family in Germany so no clue if there is any/much difference. Friend is Sephardi . I’m Ashkenazi. Thanks

Go to Costco.

Jeans down the best chicken schnitzel I have ever had outside a restaurant.

Failing that, start off by emptying that packet of breadcrumbs into the food waste bin. Bought breadcrumbs are uniformly ghastly. Instead use either coarse matzo meal (if you're going to fry) or crushed cornflakes (if you're going to oven bake).

Tenderise some skinless breast fillets with a meat hammer. If you don't have a meat hammer, put one fillet at a time in a large sandwich bag and beat it thin with a rolling pin.

Dust both sides of the beaten fillet with flour, or dip each side in a plate of flour and dust the excess off.

Put beaten eggs in one shallow bowl or baking tray, and matzo meal or cornflakes in another. Dip each floured schnitzel in egg to coat both sides, let it drain off, then dip it in the matzo meal or cornflakes.

If frying, lay it gently in the hot oil and fry on both sides until cooked. Sorry, don't remember how long, because I haven't cooked them this way for years. Drain on crumpled up kitchen roll.

If baking, lay them on a greased baking tray and roast at about 200C for about 20mins, turning over after about 15mins.

Or buy them from Costco.

I forgot, season the flour. I like freshly ground black pepper and some stock powder.

Costco schnitzel are nothing to do with jeans. They, unlike autocorrect, are hands down the best.

Thank you so much. Oh that’s disappointing about the sainsbo breadcrumbs but can get matzo meal easily. I’m not eligible for Costco membership but will ask if any of my friends are. I’d far rather buy theirs if they’re so good as I’m not the best of cooks and I’ve never tried making this before. If Costco isn’t doable I’ll have a trial run or your recipe before making them for my friend. She’s just got back from long, difficult and very sad stay with family in Israel and I want to make something I know she likes when she’s there.

Dilbertian thank you for your kind words. The grief of the deaths of close family members, is starting to hit her now she’s in the UK . My heart breaks seeing her so distraught. Im just giving hugs and as much care and support as I can.

I pretty much do what @Dilbertian does. I use medium or regular matza meal (its never called coarse ime - rakusans has fine, medium and cake, other brands just matzo meal and cake. Cake is only really used on Passover)

My husband nostalgically talks about the best schnitzle he ever had in Yeshiva, the cooks used to hammer the chicken breast with a meat hammer before coating.

I just slice the breast or buy pre sliced. Most kosher butchers sell chicken pre sliced for shnitzle.

Oh, you have to hammer the meat. Sliced just makes grandiose goujons. Hammering tenderises the meat - that's what mates it so good.

You're right about the matzo meal grades. I wonder whether Rakusens ever had a coarse one, or whether I just remember it as the coarsest of the three grades.

Panko - the secret is panko breadcrumbs...
Cornflour with lots of seasoning (cumin coriander salt pepper tuneric) > then MAYO > then flour. Then fry...yes fry it to achieve best results. You can then freeze and re heat in the oven.

If you don't want to fry then you need to coat in roughly crushed cornflakes, not matzo meal.
