How far ahead are you making it? You may be eating it too soon. Honey cake, like gingerbread, improves and becomes more moist if you let it age for a week or so before cutting.

I make this one every year and it's delicious. We do it as cupcakes as per the recipe so my kids bring it for snack all week to school. Lasts pretty well and isn't insanely sweet.

I would like to second Beret's honey cake recipe - I made it today and have the following to say - it's quite a lot of it, fairly easy to make, the batter is very runny but cooks beautifully. The smell is very sophisticated spicy and unusual, I can see where the majestic bit comes from! Not too sweet despite the generous amount of honey and sugars, I used demerera and dark brown sugars as well as eucalyptus honey. I did use all the liquids suggested and they combined very well. It's not at all dry, so I hope to bake it again and again. Not as much faff to make as a Russian Honey cake. And it's supposed to get even better tomorrow! Thank you Beret! So pleased you enjoyed it @notsure75 . I just wish I had my grandmother's honey cake recipe. It was delicious. I remember going to her flat with my mum and brother after she died and finding some of her honey cake in a tin. We finished it laughing and crying, knowing it was the last time we'd eat her cake but so pleased we could have it one last time. Literally a bittersweet moment.
