the trouble is that if you do read the Ts and Cs, they take about 2 hours to get through and look very scary most of the time.

We booked our holiday online and the Ts and Cs are really scary. We did contemplate not booking as a result!

Actually, IIRC from law school, particularly onerous T&Cs have to be specifically brought to your attention. So those shoppers may be able to sue for the return of their souls
